Busy fall days means standing in the aisles of a grocery store, just longing for a wee bit of inspiration.

Thankfully my sweet mom often hands me copies of her latest stack of favorite recipes. I have no idea where this one came from, so if it’s yours..  thank you!

At the top of this one, she’d noted “Good” and “Hot”.

I will be adding “Fast” and “Simple”

and

“Thank Heavens”

If you still have some fresh, sweet peaches.. this would be amazing…

Ingredients
1 cup Medium or Hot Salsa
1 cup frozen, thawed, or drained canned peach slices
1 lb deveined, peeled, medium sized shrimp
1-2 tbsp fresh cilantro minced
1 1/2 cups napa cabbage, chopped
6 corn tortillas (6 inches), warmed
Instructions
Heat salsa and peaches in a skillet over medium heat until mixture is hot. Add shrimp and cilantro and continue to cook until the shrimp is cooked (pink and no longer translucent). Place a handful of napa cabbage down the center of the tortilla, top with the shrimp and peach mixture and add additional cilantro to taste. Wrap the end and then fold over the sides of the tortilla.

Love the use of cabbage here both a a ‘filler’ and to balance the flavours! Looking at your list, and I make them all the time: sheesh If I tried to manage some four coffee breaks instead of just the morning cuppa, methinks I would need a 36 hour day and not the 30 hour one agreed on the last place visited :) !

Barbara Bamber | justasmidgenSeptember 10, 2012 - 11:31 pm

Hahaha.. I think coffee is my favorite “food group” although I realize it doesn’t really count as lunch, it usually is.. :D

Barbara Bamber | justasmidgenSeptember 10, 2012 - 11:34 pm

By the way… your blog name/link and photo.. don’t show up here??

KaristaSeptember 10, 2012 - 11:41 pm

This is my kind of recipe Smidge. Fresh, fast and tasty! My family would love this one. I completely sympathize with you, my list is oh so similar. Finding time for my workout seems to be the most challenging. Well, that and laundry. :(

BluejellybeansSeptember 11, 2012 - 12:03 am

You’re so funny! Your recipe sounds delicious; hot, good, fast and simple: perfect!! ;)
Thanks for sharing

ChgoJohnSeptember 11, 2012 - 12:24 am

Quick, easy, and delicious. After such a busy day, your meals had better be easy! Even so, you hit this one out of the park, Barb! Heck! I’d enjoy it as a salad. Good thing, too, because I know I’ll forget to buy the tortillas. :)

thecompletecookbookSeptember 11, 2012 - 1:46 am

Well, if it has both your mom’s and your seal of approval then this is a winner!

It’s breakfast time here and I want these Tacos now ! They’d be quick and easy and oh so tasty

whilehewasoutSeptember 11, 2012 - 2:38 am

This one looks amazing… shrimps with peaches? Yum!

MeenakshiSeptember 11, 2012 - 3:04 am

I have had shrimp with mango, but not peach. Don’t know why I never considered it!! Looks great. And have a great fall.

Chica AndaluzaSeptember 11, 2012 - 3:22 am

Thanks heavens indeed! What a lovely recipe to come back to now that I am reconnected…and am glad to see your list is as long as mine :)

ruthehSeptember 11, 2012 - 3:54 am

Love your “to do” list. The photographs are so pretty and enticing, too. The distinction of a LARGE glass of wine is helpful when putting this all together. Wouldn’t want to skimp on the ingredients of a wonderful combination.

imagesbytdashfieldSeptember 11, 2012 - 4:25 am

I would never have thought to add peaches to shrimp! I see a future experiment. Now I’m wanting coffee ;)

MiskySeptember 11, 2012 - 4:25 am

Very clever flavour combinations!

glutenfreezenSeptember 11, 2012 - 4:45 am

Lovely tacos! I bet the peach and shrimp work very well together. :)

hotlyspicedSeptember 11, 2012 - 5:09 am

Those tacos look beautiful Smidge. Such colour! My days seem very much like yours. I write lists just like that and my mother is always offering me recipes too. Mostly from ones she has cut out of the paper xx

Sawsan@ Chef in disguiseSeptember 11, 2012 - 5:21 am

I too, sometimes call my mum looking for inspiration :)
I love how colorful this is, everything around is whispering of the aproach of fall and a few bright flavors and colors are more than welcome

sallybrSeptember 11, 2012 - 6:01 am

What a beautiful recipe! I don’t cook enough with peaches, I went to my blog and noticed I have ONE recipe for a salad using peaches and that is it. Too bad, it’s such a wonderful ingredient in savory dishes, as you proved so well!

tacos are always welcome by my beloved… he would love this!

Bam's KitchenSeptember 11, 2012 - 6:40 am

Moms always know best and she was spot on with this recipe. I think I have you beat on your coffee intake. I know I need to cut back…

Gretchen O'DonnellSeptember 11, 2012 - 7:45 am

Wow – how tasty this looks! My husband is allergic to shrimp…perhaps I need to do this when he’d on a business trip?!! Thanks for the inspiriation! Haven’t the peaches been marvelous this year?!

Barbara Bamber | justasmidgenSeptember 11, 2012 - 7:49 am

I think about cutting back and then I think.. why?

Barbara Bamber | justasmidgenSeptember 11, 2012 - 7:50 am

That was my only regret.. not having any fresh, juicy ones in my kitchen to use! They were outstanding this year!!

TessaSeptember 11, 2012 - 7:53 am

Gorgeous tacos and lovely photograph!

gastrogardenerSeptember 11, 2012 - 8:07 am

Looks really good! And so fast! Bright summer flavors, this would be great in January!

vbholmesSeptember 11, 2012 - 8:15 am

Gorgeous photos, beautifully composed–and the tacos sound good as well.

bitsandbreadcrumbsSeptember 11, 2012 - 8:18 am

The shrimp-peach combo with some heat and then the cooling napa cabbage and cilantro…it just sounds like the perfect taco in my book! That’s a big list…I thought mine was long. I with I could have more than two cups of coffee, but it will keep me up through the night if I have any past noon! :)

saffronandhoneySeptember 11, 2012 - 8:53 am

I want to make this right now, Smidge! Outstanding.

Judy@Savoring TodaySeptember 11, 2012 - 9:05 am

Love how you mixed the coffee in there … that’s my kind of schedule. ;) Sweet and spice is one of my favorite combinations, these sound perfect.

Judy @Savoring TodaySeptember 11, 2012 - 9:07 am

Love the coffee woven through the schedule — I’m right there with ya! Great recipe, love the sweet and spice combination.

susielindauSeptember 11, 2012 - 9:29 am

Coffee is an important ingredient in my day too!
Luscious recipe! Thank heavens for moms!

Three Well BeingsSeptember 11, 2012 - 9:46 am

This sounds delicious! I order shrimp tacos at one of my favorite beach restaurants, and as good as they are, I think you have them beat! The peaches are the scrumptious addition! Your list is daunting. I learned a while ago not to write it all down. I only grew discouraged! Ha! Debra

Profiteroles & PonytailsSeptember 11, 2012 - 10:15 am

This fall I have three nights of the week where I have 30 minutes to cook, serve and eat before heading off to one of the girls’ activities. This recipe sounds perfect for one of those nights!

Just Add AttitudeSeptember 11, 2012 - 10:57 am

I laughed when I saw the four coffees on your to do list. Coffee is always on my to do list and no matter how busy I am I always find time to sit down somewhere and take five minutes out over a coffee.

frugalfeedingSeptember 11, 2012 - 12:08 pm

Get on it, Barbara :D . These tacos do look entirely wonderful! I haven’t had anything like this in a long time… hmm…

Eva TaylorSeptember 11, 2012 - 12:12 pm

Peaches and shrimp souls like a great combo, Smidge. I recently made spelt fajita shells (post to come soon), and the were really good.

edithlevyphotographySeptember 11, 2012 - 1:16 pm

Looks delicious…you’re making me hungry :)

SarahSeptember 11, 2012 - 1:43 pm

Mmmmmmm, I am ready for THIS after a long day in the car today. Thank you Smidge, for the fantastic, quick recipe! They look like just what I need right now :)

wendy@chezchloeSeptember 11, 2012 - 3:25 pm

How many of us share this same list (well except the cello part!) and need more hours in the day?
I have some peach salsa I canned and just may post. Already wanted to link to your canning post and now this. You’ll know if I do ;-)
This is a perfect dinner for the end of a very busy day.

AllisonSeptember 11, 2012 - 5:53 pm

Oo, such mouth-watering photos. And I’ve been having a very to-do list-focused day, so taking time out (from my to-do list) to read this post didn’t feel like too much of a diversion!

lapetitebakerSeptember 11, 2012 - 5:55 pm

You’re photos are mouth watering. These shrimp tacos are going to be dinner tonight. Done and done.

yummychunkletSeptember 11, 2012 - 7:26 pm

That’s quite a list!

EhaSeptember 11, 2012 - 10:33 pm

Beautiful lady: simple explanation – I am a cuckoo in the nest! Work fulltime, study ‘another’ fulltime, do voluntary work ‘another fulltime’ and have large garden etc etc et al. Typical Gemini: finger in every pie. Live rurally and perhaps at a certain time in life [not that that will ever hold me back :) !] SO: no blog to call my own: boo hoo!

Ashley LarkinSeptember 12, 2012 - 12:47 am

Nummers!

129twigandvineSeptember 12, 2012 - 4:46 am

It’s 6:45 in the morning and I am hungry for this. Probably the jetlag. Just got home from Paris last night, and so I guess it’s lunchtime for me! Love your to do list. Today I am going to have a not to do list so I don’t overdo it.

Carolyn ChanSeptember 12, 2012 - 4:52 am

That’s a lotta coffee Smidge! That’s where you get all your vibrant energy from! Lovely recipe for a weekday dinner.

TandySeptember 12, 2012 - 7:26 am

Easy! Now, I’m off for some coffee :)

KristySeptember 12, 2012 - 8:08 am

I do have some fresh peaches left! This looks great Smidge. And I love easy! My weekdays are a series of checklists too. :)

Jed Gray (sportsglutton)September 12, 2012 - 8:34 am

Not sure why I haven’t tossed peaches in with my tacos before, but it’s on the to-do list now!! I know how good it would be. Cheers!

ceciliagSeptember 12, 2012 - 12:39 pm

Goodness, what an idea, I love the look of those.. and where is the glass of wine in the garden on your to do list! you missed it! c

vivekaSeptember 12, 2012 - 3:53 pm

This is serious naught food, Barbara – this just have to go .. and I love that everything are ready made, very sexy too. Some action list … got tired through reading it. Wouldn’t mind more of those “Thanks Heavens” recipes. It’s wonderful to see that you too – chose the quick path. Stunning and so tempting photos as always. A pleasure to land here.

spicegirlflaSeptember 12, 2012 - 5:03 pm

If you truly do write up a to do list like this and truly have a coffee listed as a must do, then you and i are best friends for sure!! I write in my coffee break daily!! tho for me its just espresso first thing and again at 2pm…but no less than that!! And of course, a glass of wine at 5pm to set the mood for dinner prep :) How very nice to receive inspiration like this, your mom knows what will taste really good!!

My Italian Smörgåsbord (Aka Barbara)September 12, 2012 - 5:18 pm

so colorful and juicy! and what a nice life you have! cello? so interesting…

spreeSeptember 12, 2012 - 5:28 pm

OK, I know I can’t just say the same thing I always say (or always WANT to say – which is: you are just flat out adorable, Smidge!) so I won’t say THAT. I’ll say instead, I love the idea of a peachy easy (beautiful!) dinner like this during the season where madness momentarily takes hold as we try to get our new/old mojo goin’ again. You’re so right about what that check list looks like this time of year! Mind bogglin’. And so, a dinner like this, pure peace and peach! So good! xx

Celia @ Fig Jam and Lime CordialSeptember 13, 2012 - 2:42 pm

Smidge, that looks fantastic! Healthy and delicious! Good on your mum.. :)

rsmacaalaySeptember 13, 2012 - 2:54 pm

Wow youre so busy but still managed to make that nice dish

Keep Calm and Eat OnSeptember 15, 2012 - 7:52 pm

Love the idea! I’ll be keeping this in mind for one of those quick suppers. Love shrimp!

Purely.. KaySeptember 17, 2012 - 10:53 am

Your to do list looks very similar to mine… but mine always seems to get lost on my desk lol. And who doesn’t love shrimp tacos… I know I can’t wait to make this version

ekweeSeptember 17, 2012 - 11:04 am

Oh my gosh this looks absolutely delicious!! I just found your blog and love it. The layout is just gorgeous!

RuthSeptember 20, 2012 - 5:04 pm

Haha! Shrimp is the secret [protein] weapon in the home cooks kitchen arsenal. They cook up so fast and taste good with so many things. :-)

KarenSeptember 20, 2012 - 6:44 pm

Peaches and shrimp….spicy and sweet. This sounds delicious.
