My traitorous eyes snapped open at the “crack of dawn” this morning.. after only 4 1/2 hours of sleep last night.
As you can imagine, I was beyond thrilled to know that I’d have plenty of time to prepare { insert sarcasm } for a 9 am start time for the bike ride “to Bragg Creek and back”. Endless lurched cups of astringent coffee ensued while I attempted to rid my brain of its irksome cobwebs. Insomnia can be a cruel tyrant sometimes.
Well, the “to Bragg Creek” part was less than stellar so I decided to circumvent the “and back” part and immediately transmitted urgent texts to my sleeping daughter: “help me!” stop “please come save me!” stop “please wake up!” stop “I’m going to die in a ditch!” stop
As luck would have it Sleeping Beauty did wake up, drove out to have lunch and then heaved both bike and carcass into the car for a much nicer “ride” back home. We’d had such a lovely brunch together and the day was nascently sunny.. so we decided to go for a little stroll along the Weaselhead Flats in North Glenmore Park. In my mind this would only require a little bit of “wandering along” on my part.
Despite the best laid plans, we started to talk.. and 2.5 hours later we arrived panting back at the car, exhausted.. and famished again!
So after 45 km bike ride + 10 km hiking .. we needed a little something to replenish our depleted Energy.

Vegan ‘n Gluten-Free No Bake Energy Bites
One of my favorite bloggers has to be Blissful Britt! She is a wicked fast and super dedicated runner.. she’s got a great sense of humor, she’s genuine, honest, beautiful and inspiring. So.. you can’t blame me for these dangerously addictive little Energy Bites..
If Britt loves something you can bet you will too!
I’ve only tweaked the recipe a tiny bit to make them Vegan..
because even Vegans, Insomniacs, and Lethargic Cyclists require a little Energy once in a while, even if they’re not running marathons.
Thanks, Britt!
♥
- 1 cup oatmeal
- 2/3 cup flaked coconut, toasted
- 1/2 cup peanut butter
- 1/2 cup oat bran
- 1/2 cup Enjoy Life Vegan Chocolate Chunks, chopped
- 1/3 cup honey (substitute agave nectar if you wish to make these Vegan)
- 1 tsp vanilla
- Mix all ingredients in a medium sized bowl. Put bowl into refrigerate for about 30 minutes.
- Remove and shape into balls. Store in an airtight bowl and keep refrigerated for up to one week.
Any preferred substitutes can be made to dry ingredients in this recipe, for example, craisins for the vegan chocolate chunks, wheat germ for oat bran, etc.

You just MADE MY DAY!! This is such a beautiful post, and thank you SO much for your words about my blog!! I adore you sooo very much!! I am so glad you made these, and enjoyed them!! I must try your version now!! YUM YUM!! Any excuse for energy bites is a GREAT excuse!
It’s all my pleasure Brittany.. these are definitely YUM YUM!! And I meant every word about you:) xx
These sound yummy! I love Brittany too…she is amazing and absolutely hilarious!! I make some balls very similar to this too, but use sun butter so they are also nut free and I roll them in cinnamon! Oh, and lots of vegans don’t eat honey…it doesn’t bother me at all, just thought I’d mention it so you could put maple syrup or agave as an alternative :). Pretty photos too!
Oh.. dear lord.. I guess I have to change this then.. no honey? What are they thinking, lol! Thanks for the heads up Brandi:D
Yeah, since honey is technically not plant based (from bees), it’s not vegan. Lots of vegans won’t consume it 🙂
I love Britt she is such a brilliant blogger 😀
Glad you made and enjoyed this delicious recipe of hers!
Cheers

Smidge, you make me feel so guilty. I have not done any exercise for the longest while – that infamous life bit and then pure laziness! I blame winter completely – you believe me right!
Fabulous treats – think I would have a slight problem stopping at one or two.
Have a beautiful week ahead.
🙂 Mandy xo
They look so tasty and easy to make! Thanks for this recipe.
love these little bites! they sound delicious. I always enjoy a good recipe for these, since I like to keep something around the house for when we have “on the go” days. thanks, Barbara!
These look yummy! Hope you were able to get a little nap in to make up for the lost sleep. I’ll have to check out Blissful Britt’s blog. 🙂
Awesome job on the bike/hiking combo! Awesome job on the energy bites, you definitely worked hard to earn those 😉
Well, the anonymous was me… not sure what happened there. Maybe I am lacking energy? 😉
Wow, Smidge, that is a lot of biking and hiking for one day! No wonder you needed these little beauties to re-supply your energy stores. Bet they taste yummier than my usual energy bites (chalky, ick!) 🙂
I just love those moments with friends when time get lost. Sounds like you had such a time. What a way to end the day with these tasty energy boost.
How good it is to have a daughter with a driver’s licence! Good on you for doing so much exercise in one day. How’s the diet going? xx
WOW! This is a must-try! I think it will also be a nice pre-work out snack.
45 Min. bike ride plus hiking… You are so in shape and I am so impressed… (and your recipe sounds delicious) Diane
Gosh, Barb! Are you in training for the triathlon? I hate to tell you but one of the legs is a swim and not sleep deprivation. You were close, though. 2 out of 3 ain’t so bad!
These energy bites sound great. I bet they hit the spot after your workout. I know I would have needed them — and a beer or two. 🙂
A true treat and healthy as well–what more can you ask?
We do a lot of exercise, and sometimes I wonder why! OK, I know why, and I like it – a lot – but sometimes I just lack energy. Enter these terrific looking energy bites! Great flavors, and so easy to make. Really good stuff – thanks.
Looks perfect for summer hiking!
Mmmmmm! Delicious. I would love to pop a few of these…or a lot of these. And I could use the energy. 🙂
Those look great!!!
I love an easy afternoon energy snack!
45 km bike ride + 10 km hiking?? oh Lordy, you are one very strong lady. I’d be hyperventilating after the 1km mark! Go you!!
Your vegan balls look yum indeed. I have all those igrediants, pantry staples, so I definitely know what I’m making tonight 🙂
Such cute little buttons 🙂 and they look quite tasty as well! Thank you for sharing!
You are putting me to shame with your 45km bike ride and 10km hike! good on you! I’m sure these energy balls would be a great and delicious snack to refuel. bookmarking this!
Hi there Miss Spree, I’m doing a bit of catching up and found these treats – and the added bonus is a no-cook treat, we are having a mini heatwave and the thought of going near a cooker just makes me hot and bothered!
So out of your bike ride-hike, insomnia came these beauties. happy days
I’ve just pinned these Barbara. I’ve been trotting out the same energy balls for weeks now and my kids are so bored with them. These sound beautiful – love the addition of oats. I’ll substitute the peanut butter for sunflower butter to make them nut free.
