Vegan ‘n Gluten~Free No Bake Energy Bites

My traitorous eyes snapped open at the “crack of dawn” this morning.. after only 4 1/2 hours of sleep last night.
As you can imagine, I was beyond thrilled to know that I’d have plenty of time to prepare { insert sarcasm } for a 9 am start time for the bike ride “to Bragg Creek and back”. Endless lurched cups of astringent coffee ensued while I attempted to rid my brain of its irksome cobwebs. Insomnia can be a cruel tyrant sometimes.

Well, the “to Bragg Creek” part was less than stellar so I decided to circumvent the “and back” part and immediately transmitted urgent texts to my sleeping daughter: “help me!” stop “please come save me!” stop  “please wake up!” stop “I’m going to die in a ditch!” stop

As luck would have it Sleeping Beauty did wake up, drove out to have lunch and then heaved both bike and carcass into the car for a much nicer “ride” back home. We’d had such a lovely brunch together and the day was nascently sunny.. so we decided to go for a little stroll along the Weaselhead Flats in North Glenmore Park. In my mind this would only require a little bit of “wandering along” on my part.

Despite the best laid plans, we started to talk.. and 2.5 hours later we arrived panting back at the car, exhausted.. and famished again!

So after 45 km bike ride + 10 km hiking .. we needed a little something to replenish our depleted Energy.

One of my favorite bloggers has to be Blissful Britt! She is a wicked fast and super dedicated runner.. she’s got a great sense of humor, she’s genuine, honest, beautiful and inspiring. So.. you can’t blame me for these dangerously addictive little Energy Bites..
If Britt loves something you can bet you will too!

I’ve only tweaked the recipe a tiny bit to make them Vegan..

because even Vegans, Insomniacs, and Lethargic Cyclists require a little Energy once in a while, even if they’re not running marathons.

Vegan ‘n Gluten~Free No Bake Energy Bites
 
Ingredients
  • 1 cup oatmeal
  • 2/3 cup flaked coconut, toasted
  • 1/2 cup peanut butter
  • 1/2 cup oat bran
  • 1/2 cup Enjoy Life Vegan Chocolate Chunks, chopped
  • 1/3 cup honey (substitute agave nectar if you wish to make these Vegan)
  • 1 tsp vanilla
Instructions
  1. Mix all ingredients in a medium sized bowl. Put bowl into refrigerate for about 30 minutes.
  2. Remove and shape into balls. Store in an airtight bowl and keep refrigerated for up to one week.
Notes

Any preferred substitutes can be made to dry ingredients in this recipe, for example, craisins for the vegan chocolate chunks, wheat germ for oat bran, etc.
