These look really good. I love how decadent they look yet there’s no sugar. Amazing how you were able to find those chocolate drops and how refreshing to see just three ingredients on the list – if only all packaged food was made with real ingredients and nothing harmful xx

Sounds delicious, Barb, and glad to see that the Emeril recipe is the GF gift that keeps on giving. I just don’t think a snack that requires a spot on the counter is right for this household. Whether left on the counter or in Max’s feed bowl, the difference in its shelf life would only be minutes, if that. :)

It’s quite a sticky dough, it’s my way of making sure the cookie comes off the cookie sheet easier:) If you have a non-stick pan, you should be ok! xx I hope you have a wonderful weekend as well! xx

Hope you will post a follow up after you add the brown rice flour. Leaving anything with chocolate in it on the counter is not an option for me (they will not be on the counter for long) as I am trying to maintain a certain weight.

I am sure these delicious little chocolate bombs will help them preserver through the worst of it. Exams and expectations are getting more difficult each and every year, especially here in HK, China, some really tough competition here. I feel sorry for our kids as it was not like this all those years ago when we attended school. All the best to your crew for success. Have visit quite a few of the war cemeteries in Normandy, France .. far too many of them.
And still every day men and women die for wars that isn’t even theirs. A beautiful tribute.

I am also fascinated by different ingredients, and methods of cooking – sometimes I fall on foreign blogs and do my best to extract the “essence” using google translate – not easy, but it does give a tiny window to peek into a different world. Still, so many bloggers all over the world blog in English, those who speak the language are very luck! ;-)

This time of year, there aren’t many salads that appeal to me — the veggies just aren’t at their peak anymore. This one, though, is perfect. The flavors are bright and the salad colorful — just what’s needed on these now gray-skied days.

There is tiny country cemetery near Godalming in Surrey, England which is filled with Canadian war dead from WWII. I know it because my Godparents are buried there, overlooking the cottage that they lived in. Remembrance Sunday is made even sadder by the continual addition of wounded young men to the procession of old soldiers remembering wars which have taught us nothing.

Indeed a breathtaking view, shocking in the same time…
It seems like ages ago, but then the last war is still in the air some parts of the world.

The couscous in Lebanon is so huge, like the one from Israel. I have never cooked or indulged in this type, we are used to the small Moroccan type.

I agree, we can estimate ourselves lucky to live in a almost peaceful century, in a world where we can share and communicate with each other, nearly without borders.

I hope you love the book as much as I do.. I’m only half way, fingers crossed, but I don’t think it’s a happen ending for the two of them??

I, too, was absolutely terrified when I realized I had to make something Vegan for my daughter’s friend who was attending. I’d read that egg substitute can taste metallic, so I thought a dense and spicy cake would hide that, as opposed to a fluffy vanilla flavor. The icing, when first mixed, had a latent “tofu” flavor.. which made me think it would disappoint. In true form, I went around apologizing about the icing to everyone and they thought I was crazy. When I ate my slice later, I realized that tofu flavor had vanished. The cake tasted exactly like the original. Now, having said all of that, the original recipe may have a slightly higher “rise”? Vegan or regular, they tasted exactly the same. It makes me so much braver to try again when I have to.

Thanks so much, John.. the technique is easy, I think the trick is not making such big “blobs” of icing and then smearing a little more on the gentle side.. for some reason the sides reminded me of owls feathers:D I was so impressed by the substitution in this recipe. I might be game to try with a lighter cake.. but given I’m not vegan.. I may not get the chance:) Thanks again!

What a wonderful surprise to find this link and recommendation from one of the best recipe writers on the web. Wow! Truffle risotto…..yes! The most important thing is to have truffles. The black truffles from Oregon are honestly quite nice and a fraction of the cost of the Italian and French varieties. Make a rich chicken stock then cook some lovely mushrooms in part of the stock and pour another over some dried porcinis. This will provide when blended (removing the shrooms for another use), a wondrous umami base. Use some Vacche Rosse or other unreal Parmigiano that is fresh as fresh. Make the risotto as you would normally, the shave those truffles in abundance right over the top and serve. (a truffle shaver is almost essential unless you have a very precise mandoline) I am now craving the heck out of this!

Barbara, you world is delicate and beautiful … it’s a pleasure every time I visit. You should be a food stylist – just like Wendy do you have the eye for that little extra detail to make the most boring product exciting. Brownies aren’t the most photogenic object.
Like brownies and I can see that you have a banana in the recipe. Never baked brownies before .. as you know I don’t really that into baking. But this I will try and then I will eat them all by myself and feel sick for 24 hrs. All your fault.

Oh these look so good! I’ve never tried a gluten-free recipe, but I’m on this. I have everything here….it’s a miracle! I am a brownie-addict, but the gluten-free thing has always made me look for a different recipe. Dumb, I know. But your pictures here Smidge, they make these look like my idea of the perfect brownie. well…where do i start? beautiful photos Smidge. We’ll start there. Then, I’m struck by the pan you used…so you must cut your brownies into little pie shapes, and dowse them (do you dear?) in whipped cream? And then have to exercise even (more) restraint? That would be such a pity! I imagine with the applesauce and mashed banana these are extra moist (making up for the lack of eggs.) spree.. you have to be the most observant food writer I know! Out here at the lake, I lake in a variety of pans in shapes and sizes so I had I make do. This was the closest to a 9×9 pan.. but then I found the batter way too much even for this little springform so I poured some into another oddly shaped dish. I’m old fashioned.. my brownies are usually square;) It was an interesting recipe, Emeril sure knows his “stuff” because you could taste the applesauce before it went in to bake.. but never could you taste the banana.. very cool. xo Smudge..er Smidge:D
ps I had a favorite child’s book about a dog named Smudge and you’ve reminded me of it today!!

I will try to answer most of your questions.. First.. I’m so happy to have met you:) I used a springform pan in the picture and a white, oval baking pan (the kind that comes with a lid).. because I’m at the lake I don’t have all the correct pans. I would think you’d need two 8×8, there was just so much better and I didn’t want really high brownies (if that makes sense). I have a Canon 7D with a lens I got with my last camera about 8 years ago. It doesn’t have a tilt shift lens.. just a regular one I can zoom in an out with. I did learn how to use Aperture Mode and do all my photos with that one.. But every camera is different, maybe you have a manual with yours? I bought Tartlette’s book for Food Photography and it is just packed with ideas. I’m off to visit you:) xx Smidge

I just made these! first of all they were really really moist which was awesome. but too many chocolate chips for sure!! I would do maybe 3/4 cup chocolate chips and some nuts. I made these brownies a couple days ago, and they are hands down the best vegan brownies I’ve ever had! Me being my sneaky self, didn’t tell my fiance what they were made out of, I just said try them. He did, and LOVED them! This being said, I knew they were going to be good! They are thick, chocolately, and pretty much just plain delicious! I will be making these brownies over and over again! It’s about time someone came up with a great vegan/gluten free brownie that actually tastes like it should!

I’ve been using a lot of ground almonds lately in gluten-free things — it only takes a minute or two to blanch raw almonds, pop the skins and grind them in the blender. I loved that one too.. I’m working on an embroidered tea towel myself, but it won’t be anything like this one, that’s for sure!! I’m finding it’s easy to go gluten-free, not so easy to be vegan.. substitutes for eggs aren’t the easiest..

These sound delicious! My favorite peanut butter cookie recipe is the one that’s just peanut butter, sugar, and an egg, and I recently made them with almond butter instead (and chocolate chips of course!) – sooo good. I bet these would be awesome with almond butter, too! Enjoy the Stampede – one of these years I will make it to Calgary to check it out!

I haven’t had that problem, Barbara, but I use a blender or a mortar and pestle, rather than a food processor.

Loving your boots!! I so want a pair, I bet I could dance in those, and act the part – might have to do something about my accent though :) The 10 days of festivities sounds a hoot, and fried pickles? I’ve never heard of these before, I’d have to try those, and when I’ve eaten my fill I’d dance some more :)
And your recipe is so simple! I’ve come across alomond flour here in the health food shop and have been looking for an excuse to try it. Yaay !!
Oh, and fab photos as always, so imaginative and pretty !

My nephew Brian used to live there, we visited last year in June. He’s moved back to Toronto now but is out there visiting for Stampede! I’m sorry we missed seeing Stampede, but hotel prices prohibit a visit these days. These cookies look wonderful. I have a gluten intolerant friend and I’m sure she would love them. Love your boots. I bought a great pair http://kitcheninspirations.wordpress.com/2011/06/25/our-trip-to-calgary-alberta/ last year in Calgary (that very cool downtown walking area). Wish he was still living there so we could visit during stampede!

Well.. I am the person to ask for sure!! I substituted Almond butter and it didn’t work out.. the first time! Because it looked so runny I added Coconut Flour (big mistake) because that stuff could be used to make sculptures with it hardens up so much, lol!! I’m still working on one, though..

Haha, those boots look awesome Barb! I’ve always been a big fan of peanut butter cookies. I can’t say I like peanut butter all that much but it’s one of those things that tastes amazing when it’s cooked. Love how chunky your cookies look!
