I remember exactly the first time I had Bircher Muesli, it was 1989 in Zurich. My hubby had a business meeting and the fellow he was meeting with sent his wife to show me around. We became fast friends and continue to see the husband (they are sadly divorced) to this day. The Bircher Muesli was made with grated apples and whole grapes (they were seeded grapes) and dried fruit (a variety). I don’t add any sweetener to my recipe because I find the apple is enough, but if I were making it for children I would follow your lead with the honey. I also choose the healthier breakfasts when on vacation, it’s an easy meal to really button down on the calories. But I have to warn you, I once saw them making Bircher Muesli in Movenpick downtown and instead of yogurt, I saw them pouring in cream…not so healthy.

I tried muesli for the first time when I started working at TJ’s a couple years ago. NOTHING would beat homemade though, this looks delicious.

I didn’t realize muesli was this easy, and that you ‘re supppsed to put milk and yogurt in it! When I visited Germany few years ago I saw a lot of dry muesli at the buffet table with flavoured yogurt on the side

Smidge, this is a wonderful recipe. How gracious of Viviane to allow us to have this excellent Muesli for our own breakfast table! I love, love, love a good Mueseli, but I have never made my own. I will now! I agree that traveling can be a difficult time to stay with more balanced eating. I think you found a way to achieve a good balance! :-)

Fresh and Italian … great combination – always had muesli for breakfast before, but now I prefer fresh fruit salad or greek yoghurt with honey. I think I have eaten too much muesli through the all years, but I love this post and your photos make everything so much I “want it now”

I always took full advantage of the hotels’ breakfasts when in Europe. Lunch, then, was usually left to chance. I will say that we, on this side of The Pond, could learn a thing or two about street food. When home, I’m not much of a breakfast person This muesli, however, could make a believer out of me. Another fantastic post. Yes florescent lighting can be a pain, but you did it justice just the same. It could be the colour of the lamps that are being used. It has to be the light source. If I remember some of your prior shots didn’t have any tinge like these so it has to be the lamps.
Enough of the techie stuff, back to the subject at hand, your photos told the story very well.
I like the way you use soft lighting for many of your pictures it gives them a touch that only a women can do. They are soft and very easy on the eyes and for your food shots it makes one want to devour the subject.

Our most popular artisan baker is Paul Hollywood (he of Great British Bake-off Fame) – He’s a Liverpudlian (at least he’s Scouse) and a fairly intense chap – when he tells you your bread is not good on that show, you take notice!

I wish we would have known about it when we were in Calgary a couple of years ago to visit my nephew (who has since moved back to the Big Smoke). It’s wonderful that you were also able to participate in the class with The Man himself. Bread making is such an art and it’s such a honour to be taught by a professional.
I just wanted to mention that the links in italic in your text are very very light on my screen (I have a 24″ iMac), to the point where it’s difficult to read.

Gosh, Barbara… I wish I had seen this yesterday! You know, this Brazilian is locked at home due to a snowstorm, we cannot go anywhere, so we did some grocery shopping yesterday after work, and like most people in town, we now sit at home and watch the heavy snow fall. I don’t have the ingredients to make this (I have oats, but not enough almonds, no seeds). Too bad… it would be a perfect day to bake a batch (sigh)

I’m still a bit shocked too, Barb! Fortunately I’ve discovered an excellent voice dictation function on my Apple laptop (which I just got for my birthday in January and is proving to be a godsend). That’s really helping me continue to be able to keep in touch and also do some writing (While lying on the couch and keeping my left arm elevated; sitting at my desk would be quite difficult right at the moment).

I love granola, and have only made my own on a couple of different occasions. I’d love to try this recipe. Barbara could I tempt you to try a sugar/ oat vegan/gluten free version of granola that I’ve been playing with at the moment? Sprouted buckwheat is the clincher and it really is the bees knees…although no bees knees were harmed. Granola of any sort is an absolute favourite round these parts.

Very nice take on quinoa… I love this type of “portable lunch” that stays in the fridge patiently waiting… I confess that once I tried to do something along those lines using couscous – didn’t work. I ended up with stir fried couscous (sigh)

Such a nice use of quinoa! You know, I only ever just boil it and then mix it into a salad or something. It’s so fun to see other uses…. really inspirational. I bet the parmesan is absolutely awesome in this as well! :)

Have just finished lunch and remember having to move my quinoa packets twice to get to other ingredients :( ! Somehow have not used for a week or so: what a wonderful recipe to try now! I have used the grain in lots of forms, but never made patties. I may work from home and not need a ‘portable’ lunch, but, oh boy am I looking forward to these :) !

I have only cooked quinoa a few times and always in a boring salad. I like your spin on a portable lunch. Tomorrow of course she will be putting in her requests for all of her work buddies as well for more quinoa patties.

You refer to your daughter as una Bambina and then you fix patties that include organo, basil, garlic, and parmesan cheese. If you’d have used beef instead of quinoa, I’d have suggested we get DNA tests before trying to figure out how you got separated from the rest of us Bartolini.
I’ve only just bought quinoa for the 1st time last week, so, I’ve got some experimenting to do before I start making patties. Still, I can definitely see myself making these in the not to distant future. I’ll probably be ready to give ‘em a try about the time our DNA tests come back.

Ahhh… yes, the “Mediterranean Connection”, there is one in fact:D However, my family is Irish (alas.. that makes me just a “lass”) but my husband’s mom was born and raised in Malta… a wee island not far from your much larger country. I guess they make ‘em “piccolo” in Malta… Dave’s mom is a petite 4foot “something” and my daughter is tinier than me.. ringing in at 5’2″ :) Having said that.. one should never mess with a tiny girl with “Maltese Connections”..

Your wee lass is a lucky one! These look light and positively delicious. I’m wondering about forming the patties and then freezing, uncooked so to have them on hand for one of those occasions when inspiration goes missing. A good fresh salad and these patties of yours would always be good!

jeez… missed these in July too. These are a great idea. My daughter loves quinoa. I’m thinking I might also try cutting in a little ground turkey. We are always looking for new basics. She’s only eating poultry these days.
