Katie’s GF Vegan Cocoa Cookies

This is Reading Week for my kids! If you’ve ever crammed for finals.. or slaved over projects and essays you’ll understand a well-earned and much-needed break for a treat, and sometimes, only chocolate will do! Katie found this recipe.. (somewhere and just sent a text message of the ingredients over her iPhone) and we just…

I so want one – YUMMERS! Happy Friday – Happy Chocolate:)

These look delicious! And what a treat to help studying along. xx

Fantastic, Smidge! Looks like brain food to me (in the best possible way!) Bite-sized little poppers when you need a boost – I am definitely going to give these a go! I have some little GFers in my clan too! :) xx (wish good good luck on those exams!)

hotlyspicedFebruary 22, 2013 - 1:29 pm

These look really good. I love how decadent they look yet there’s no sugar. Amazing how you were able to find those chocolate drops and how refreshing to see just three ingredients on the list – if only all packaged food was made with real ingredients and nothing harmful xx

Choc Chip UruFebruary 22, 2013 - 1:42 pm

These look utterly lovely and so healthy my friend :D

Not a cookie maker, but this I think I would be able to pull off.
Why does the baking sheet lined with parchment or with silpat liners.??? In clear language what does that mean???
I hope you will have a great weekend.

kathryningridFebruary 22, 2013 - 7:13 pm

This one is *begging* to be fixed chez Sparks!!!

ChgoJohnFebruary 22, 2013 - 9:40 pm

Sounds delicious, Barb, and glad to see that the Emeril recipe is the GF gift that keeps on giving. I just don’t think a snack that requires a spot on the counter is right for this household. Whether left on the counter or in Max’s feed bowl, the difference in its shelf life would only be minutes, if that. :)

Barbara Bamber | justasmidgenFebruary 22, 2013 - 9:51 pm

I think Max would go crazy with these left-out.. but then again, so would I:D

Barbara Bamber | justasmidgenFebruary 22, 2013 - 9:59 pm

It’s quite a sticky dough, it’s my way of making sure the cookie comes off the cookie sheet easier:) If you have a non-stick pan, you should be ok! xx I hope you have a wonderful weekend as well! xx

Barbara Bamber | justasmidgenFebruary 22, 2013 - 10:08 pm

Now that would make shopping so much easier:)

Barbara Bamber | justasmidgenFebruary 22, 2013 - 10:08 pm

Best of luck to you all with getting through the exams.

Shellfish in chocolate? Who knows – as you probably know by now we’ve been eating horse for years in ground beef without knowing it – so anything is possible

Norma ChangFebruary 23, 2013 - 9:22 am

Hope you will post a follow up after you add the brown rice flour. Leaving anything with chocolate in it on the counter is not an option for me (they will not be on the counter for long) as I am trying to maintain a certain weight.

Hello Smidge, You are such a great mom-making cookies to help our teenagers get through exams and deadlines. I am sure these delicious little chocolate bombs will help them preserver through the worst of it. Exams and expectations are getting more difficult each and every year, especially here in HK, China, some really tough competition here. I feel sorry for our kids as it was not like this all those years ago when we attended school. All the best to your crew for success. You have changed your theme again, every day I visit it is a fun little place to visit. Did you make the switch over? PS: I am having a difficult time leaving comments. Did this one go through? Take Care, BAM

Ok…I thought I’d already seen the planet’s prettiest cookie, right here at Smidge’s kitchen. But I must have been mistaken, because These are truly the prettiest little cookies my eyes have ever in their lives set upon! :) When I first saw them, I kind of had to gasp (little and lady-like of course, but unmistakably a gasp) and then I thought you must have overlaid edible lace on those little lavender hearts, but no, you Made that edible lace!!! (Well, of COURSE you did! Smidge does Nothing half-way.) And after watching your video set to some of my favorite music, I came away believing fully that I could do this! Not nearly as well, of course, but I too could make a pretty cookie! :) What a thoroughly delightful post Smidge!!! xxx

I have been following Sweet Ambs for a while now and I tried making the brush embroidery a few months back. They are not as easy as it looks. Takes a lot of practise to get them right. Have you seen her bees? They are cute too. :) You have done such an artist. Enjoyed your video and your tips. I’m inspired to give it a go again.

vivekaNovember 19, 2012 - 3:06 am

Very pretty and romantic – have seen this on TV – how to turn plates into cake stands on foot. Yours are much prettier than the ones on TV. Love the cookies too – so perfect choice for the post about your romantic plates. I don’t like those cherries – I nearly hate them … *laughing. Terrible product – I think it goes back when I started as a chef and all desserts were decorated with them – sweet and sticky, but still they came out excellent in your cookie.
Did you couscous the other evening – excellent dish – love the dressing. Couldn’t find Lebanese’s couscous – but I found what we call full corn couscous – there will be a post.

All that crafting sounds wonderful! I can tell you’re looking forward to Christmas. Last week I discovered the best craft shop I’d ever visited. It was in the middle of the countryside, not on a main road, tucked away, and it really was a treasure to find. They had a lovely display of Christmas decorations apart from other things.

Kelly @ Inspired EdiblesNovember 19, 2012 - 5:40 pm

I’m not sure what’s prettier – your cherry walnut delights or your enchanting craft – what a success; it has a soft whimsical, romantic feeling to it. A snow white set would be gorgeous!

KaristaNovember 19, 2012 - 7:34 pm

What beautiful dishes! I love the idea of repurposing vintage cups, plates into cake stands. What a great gift idea. I’m not crafty, at all. But I think I could this. So cute! Thanks for sharing Smidge.

ChgoJohnNovember 19, 2012 - 7:39 pm

Another beautiful post, Barb. I doubt you could have found a better match for your cookies than the cup & saucer that you chose for that photo. This post could be used to exemplify presentation. It really is that well done. Beyond that, I really love the combo of cherries with nuts. I bet these cookies are really tasty. :)

Profiteroles & PonytailsNovember 19, 2012 - 7:45 pm

Barb this sure doesn’t look like frugal crafting. Your cookies and platters are well suited for one another — as they are both beautiful. Now I’m torn between adding these cookies or Nell’s sugar cookies, which have been on my mind for a few weeks now, to my Christmas baking list. Can’t believe baking season is just around the corner . . .

musingmarNovember 19, 2012 - 9:13 pm

These cookies look so beautifully old-fashioned! It makes me want to revisit some of the recipes of my girlhood — all those things I used to make with Maraschino cherries before I decided they were passé. It would be fun to take a trip down baking memory lane! And I can add lovely new recipes, such as yours.

Thanks for sharing the crafting ideas. The cake stands you made are so pretty. I like your idea for a temporary bond – not only can you mix and match, but these things are much easier to store disassembled. I moved into a bigger house earlier this year, and already I’m running out of space for all my dishes (maybe because my collection keeps growing?).

musingmarNovember 19, 2012 - 9:14 pm

I was also thinking about Nell’s sugar cookies when I was looking at this recipe; I think I’ll have to make both for my Christmas dessert tray! I love the old-fashioned vibe of both recipes.

TessaNovember 19, 2012 - 9:18 pm

What lovely little cookies! And, I just love your collection of rose dishes. Beautiful!

Korena in the KitchenNovember 19, 2012 - 10:18 pm

What a sweet idea! I’m looking forward to local craft fairs, too – but holy cow, Christmas already?! Where did the time go??

jothetartqueenNovember 19, 2012 - 11:50 pm

Love your tea cup and saucer set. Beautiful! Even better that you actually re-purposed them as cookie and cake stands. What a terrific idea! And those cherrry and walnut cookies are so reminiscent of Christmas! They look really addictive! I doubt they will last till Christmas though! =)

Bam's KitchenNovember 20, 2012 - 1:28 am

This is one high styling, high tea time biscuit. I feel so girly just reading your post and looking at your beautiful China tea saucers and cups. However, I can just tell from the picture these are the kind of cookies that just melt in your mouth and are super buttery. You should give a call to the Peninsula hotel in HK and see if they want to add this to their 4pm high tea menu. Take care, BAM

Hahaha.. they’ll be gone on Friday:D

gastrogardenerNovember 20, 2012 - 8:37 am

Clever! – and the cookies look so festive!

The HookNovember 20, 2012 - 9:30 am

I think you’re the classiset blogger on WordPress, dear lady!

Coleen PatrickNovember 20, 2012 - 10:08 am

Yum to the cookies! One glance at them and they put me in the holiday spirit. And I love tea cups and saucers like the ones in the photo. We have a local store that sells overstocks on dishes and kitchen stuff. I love perusing the aisles checking out the interesting patterns! I always say I’m going to collect teapots and such, but oh what a collection that would become . . .

Geni - Sweet and CrumbyNovember 20, 2012 - 10:34 am

What a fun and pretty set of stands you made. And your cute little serving dish was perfect for those cute little cookies. I love the combination of the dried cherries with the walnuts. Sounds divine!

Gretchen O'DonnellNovember 20, 2012 - 12:53 pm

My husband strongly dislikes candied fruit…the silly. :-)

The Scrumptious PumpkinNovember 20, 2012 - 1:04 pm

Beautiful photos. I’ll have to pin these cookies because cherry desserts are my husband’s favorite :)

Keep Calm and Eat OnNovember 20, 2012 - 7:56 pm

I’m glad there arn’t many of those store here in St. John’s. I’d be broke over broke buying dishes.
They are beautiful and has a festive charm. So does those cookies. So Christmasy. Love the festive air even on this blogsphere!

ruthehNovember 20, 2012 - 9:47 pm

Love your teacup creations! And the cookies look heavenly. Going to share with my crafty friends.

rsmacaalayNovember 20, 2012 - 10:51 pm

Looks so English, I feel like having some tea just by looking at it

Promenade ClaireNovember 20, 2012 - 11:48 pm

Nom, nom, nom, nom. nom. It’s breakfast time here and somehow fruit isn’t as appealing as your cookies !

Jehanne@thecookingdoctorNovember 21, 2012 - 1:51 am

Those plates look gorgeous, and complements really well with the cookies..I’m buzzing for some crafty time now

helene dsouzaNovember 21, 2012 - 3:36 am

You have Christmas markets in canada? wow I think so I have to take my husband there one day. We have family members there but I am not sure where they all live. I love Christmas markets, they are the most wanted markets in Europe. I mean, how wonderful is it to see all those pretty goodies, sweets etc, drinking some hot spiced wine watching the snow falling and experiencing the happy atmosphere altogether.

Nice plate set Barbara. Is there a stamp on the back?

Oh I wish I could have your Cherry Walnut Cookies to chew on right now.

petit4chocolatierNovember 21, 2012 - 5:04 am

Barbara, I love the cozy antique places. I could spend days going through them. Love the markets!! Thank you for the gentle reminders of how wonderful these places are to shop at and learn about history. I love your style of writing~beautiful.

Your cherry walnut cookies are absolutely holiday and sweetness all together! I love them!

Three Well BeingsNovember 21, 2012 - 10:49 am

Aren’t you just the cleverest with these beautiful cake plates and tea accessories! You’ve given me wonderful inspiration! I have so many of these “odd pieces” sitting around. Many belonged to my grandmother and have no real value beyond sentiment, and this would be so fun to do for my nieces and daughter! Thanks for a relatively quick project! And I love the cookies. I’m big on cookies with fruit in them. And these would be Christmasy, too! By the way, your blogsite just gets more and more beautiful, Barbara!

sallybrNovember 21, 2012 - 12:51 pm

Smidge, my husband is crazy about this type of dishes – I warmed up to them quite a bit after marrying him, because back home my family’s style (or lack of… :-) was not quite like it. Now they seem charming, cozy, comforting, and sensual to me.
Loved the cookies too…

but I meant to ask you about the nomination for the best blogger in the Canadian contest… Please let me know what happened, my fingers are still crossed and it’s starting to hurt :-)

Many hugs going your way, your blog is simply amazing! (but you knew how I felt already…. no big news)

kateshrewsdayNovember 21, 2012 - 2:54 pm

What a glorious post, Barbara! I love the idea of making cake stands like this.
A pure white Christmas. the very best kind…

helpwithyourlifeNovember 21, 2012 - 5:25 pm

Those cookies are so beautiful! Look really tasty. Enjoy your blog!

trixfred30November 22, 2012 - 2:48 pm

I can think of a few women in my life who would appreciate some these items as Christmas gifts!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:02 pm

And I yours:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:02 pm

Well there you go.. one present done;)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:03 pm

Thanks so much! As you might have noticed on my last post.. I am often very late in getting to respond to awards and such, but it doesn’t diminish the pleasure I feel when I receive one.. I’m always grateful.. thanks again!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:04 pm

I would love to see pure white contemporary done too.. it would be pretty:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:05 pm

I’m glad you’ve warmed up to them. They’re pretty to look at.. I try to leave little things like this around, it cheers a person up on a bloody gray and snowy day, lol! Hey, the voting ends at the end of November.. my fingers are crossed to, but in the end, it’s all for fun:) I sure appreciate you voting, Sally! xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:06 pm

You’re lucky if you have odd bits.. I was thinking I’d love to have an online website for that sort of thing.. there are so many crafts like mosaics that can be done with bits of china. Glad you liked these:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:07 pm

I’ve become a bit of an “addict”.. every now and then I love just wandering and looking.. not necessarily buying. But I see items and love that I remember them in my house growing up:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:09 pm

Oh, hot spiced wine.. I’d forgotten about that! Yes.. that’s exactly what feels like Christmas for me.. not the big malls, etc. Stamp… I’ll go look, just a minute, lol! I’m back.. the transferware says RS and Germany:) and the other says “English Rose”. xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:10 pm

Me too.. must be the Christmas spirit.. I’m working on my next craft, lol!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:10 pm

Oh, but Claire.. now you’ve saved room for Christmas party food, yay!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:11 pm

They are yummy.. I’ll be slicing up more for work tomorrow:D xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:11 pm

I love that you call them biscuits..

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:12 pm

I wonder if cookies can be dunked in tea..

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:12 pm

Thanks! I fell in love with them:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:13 pm

Maybe that was Martha Stewart’s show:D That’s where I found the idea.. she’s got a great website for this sort of thing. Yes.. you’d think someone would have figured out a better fruit substitute? Full corn couscous sounds intriguing!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:14 pm

I like crafts.. as long as they’re pretty easy:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:14 pm

Thanks xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:14 pm

Me too.. as much as I love cookies:) xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:15 pm

I’m worried that I’m turning into a granny.. I’m too young to turn into a granny, lol!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:15 pm

It really is a cool app/website.. what did we do before? I guess just magazines?

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:16 pm

Thank you, Judy, that’s a great compliment coming from you:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:16 pm

That’s me.. a hopeless romantic:D

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:16 pm

Thank you xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:17 pm

Of course.. but I must caution you.. you risk not catching the crumbs that fall and eating those as well:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:17 pm

That is totally the sort of store I’d love to find! Lucky you!! I hope you write about it for us to see!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:18 pm

Thank you, Daisy!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:18 pm

It would.. I wish someone would make one.. or I just might have to:) xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:19 pm

They are good.. not too sweet, and the cherries were remarkably not too artificial tasting.. thankfully:) And thank you, as always.. your kind words are appreciated!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:20 pm

Oh, dear.. decisions.. Nell’s are a bigger cookie.. that I think kids would love because of their size. These ones are tinier/daintier, more for a small adult treat after a big dinner:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:21 pm

Me too!! I’m thinking I need to move into a small house that has a separate studio in the yard.. so my home isn’t overflowing with dishes:) xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:21 pm

Thanks, Tessa!xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:22 pm

High Tea!! I’ve got to do that soon! Thanks for the reminder! I think the Palliser Hotel here has a high tea.. it would be so fun! xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:22 pm

Some day I need to figure out how to ship these without having them break:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:23 pm

These are busy days, aren’t they c? Take care! xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:23 pm

Well, a girl’s gotta make up for her lack of a garden;)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:23 pm

Well, thank you!!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:24 pm

What a great store.. that’s what I think we need here. Tea pots.. those would be hard to store. Plates lay flat and cups stack.. it might be a little easier for you:) xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:25 pm

I thought about changing the nuts.. but I do think the walnuts are the best choice for this cookie.. xx

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:25 pm

Haha, more for you I guess!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:26 pm

I hope you have the chance to try them. I’ve been pinning like crazy, I now realize there aren’t enough meals, snack times or hours in the day to cook/bake everything I’ve pinned, lol!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:26 pm

Now you’re the second person to mention St. John’s today! Yes.. it can be addicting, especially for food blogging:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:27 pm

I wish I had thought of these when I was a teacher.. the Kindergarteners could have made these:)

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:27 pm

You’re right.. it is all very English:) Now I’m off to make some tea! Night!

Barbara Bamber | justasmidgenNovember 22, 2012 - 9:36 pm

It is so easy.. and the possibilities sure are endless:)

Gretchen O'DonnellNovember 22, 2012 - 9:43 pm

Yes, and I can’t wait to make my Christmas Stollen…even though I am afraid of yeast. It’s not Christmas without it! And since he won’t eat it…IT’S ALL MINE!!!

HetterbellNovember 23, 2012 - 12:53 am

I haven’t written about it, but I’ll send you the FB Page so you can see some of their photos from previous years. I don’t know that they’ve got any festive ones though.

vivekaNovember 23, 2012 - 2:23 am

No it’s was a Swedish TV show, in Sweden we don’t have Martha*smile
Had your couscous dish twice now – because I had some dressing left. Stunning – will do a post about it. So easy to make too.

saffronandhoneyNovember 23, 2012 - 1:07 pm

How festive! I can’t wait for Christmas and Christmas markets :) x

musingmarNovember 24, 2012 - 11:46 am

Doh’t forget, if you go with the smaller, daintier options then you can eat more of them. There’s something so appealing about going back for seconds (and thirds

musingmarNovember 24, 2012 - 11:47 am

Oh yes, I’m with you there. I definitely a test kitchen/studio/writing sanctuary in my backyard. Must get started on the plans …..

acanadianfoodieNovember 25, 2012 - 10:52 pm

Holy cow! Comment city! Good for you, Barbara! Love the tea cups and the dainty propriety of the post. Mom used to make a almond cherry shortbread that looks just like this cookie. Now I make them. So yummy! :) V

JoannaNovember 26, 2012 - 3:07 am

Love the biccies! Must make some soon as we love cherries and walnuts :)

KarenNovember 28, 2012 - 5:51 pm

I received a thank you gift similar to what you have made but the top was another teacup. It had been filled with a homemade candle. It is very lovely as are your cookies.

mjskitDecember 1, 2012 - 10:09 pm

What beautiful dishes! I love going into antique stores! I usually don’t buy much but I love to look. :) Your cookies look and sound quite delicious! Hope you’re having a great weekend!

Carolyn ChanDecember 2, 2012 - 9:06 pm

OMG I lovelovelove that cake stand made from the plate on top of the glass candlestick – and would make storing something so odd shaped so much easier ! Such beeeaauuutiful plates and such a great idea. I wonder if there are any such stores in Singapore… I must go and scour – I may not find anything as pretty but I’m sure I would be able to find some old Chinese plateware to replicate.

A Little White Lie for Sky-High or G-F Black-Bottom Pumpkin Pie

Which one of these is a little white lie: 1. I’m still swimming, it gets easier every day. 2. I didn’t make either of these pies. 3. I made two pies and gave both of them away. 4. I made these pies, ate a slice of both and I swam an extra 50 laps to…

sallybrNovember 9, 2012 - 7:44 pm

Because the pie you made has a very high white layer on top of it – and each molecule contained in that layer is extremely delicious – anything you say is a white lie. As long as it is contained in this post, you understand, right?

You have absolutely nothing to worry about!

And that is the pure truth. Sally said so. You better believe it. :-)

Korena in the KitchenNovember 9, 2012 - 8:09 pm

I couldn’t make two pies that look this good and give both of them away, so that’s my guess ;) I make pumpkin pie with coconut milk, too, (and maple syrup, actually!) and the gingersnap crust sounds killer. And the meringue! And the candied pecans! Oh my goodness! SO yummy.

Keep Calm and Eat OnNovember 9, 2012 - 8:12 pm

I don’t think I’ve ever had pumpkin pie with meringue on top! The only kinda black bottom I had better not be talked about…all I can say is, that time I wasn’t responsible for burning food for a change!
Chocolate and spiced pumpkins and pecans topped with meringue! You forgot to mention it was calorie free! :D

AliceNovember 9, 2012 - 8:13 pm

Not tempted at all.. What? A lie? How did you guess?

TessaNovember 9, 2012 - 8:22 pm

Beautiful pies! Pumpkin pie with meringue? Brilliant! What also caught my eye was that blue bowl with the pecans in it. Lovely!

boomiebolNovember 9, 2012 - 11:19 pm

It’s midnight and I am now sweetly hungry :)

SkuggsNovember 9, 2012 - 11:43 pm

What a pity this one wouldn’t survive an overnight post to the UK. O well, I will have to make my own, but there is no way I’d be giving it away!

TandyNovember 10, 2012 - 12:32 am

I hope you soon love your swimming as much as this pie :)

Choc Chip UruNovember 10, 2012 - 1:33 am

You may lie as much as necessary in order to get these pies to me ;)

Cheers
Choc Chip Uru

Food,Photography & FranceNovember 10, 2012 - 2:25 am

I love the pictures and your writing. That goes without saying. But, I cannot for the life of me understand how anyone could like pumpkin pie:)

frugalfeedingNovember 10, 2012 - 2:35 am

Lookin’ dangerous there Barb’ :D – seriously delicious pie, of course :)

HetterbellNovember 10, 2012 - 6:01 am

I seem to be obsessed by seasons and occasions and I absolutely love the way your blog is so often like a “soundtrack”, but with food, to the changes in the year. Or would that be a “foodtrack”? Lovely! :)

MichelleNovember 10, 2012 - 7:20 am

Funny! And the pies look great, too. Both true!

Eva TaylorNovember 10, 2012 - 7:42 am

Oh my, those pies look A M A Z I N G! And it’s so lovely of you to make one for your friend. I love to bake for my friends too, it just makes me happy. I’m keeping my fingers crossed that you’re still swimming…

gastrogardenerNovember 10, 2012 - 7:51 am

I love the idea of meringue on pumpkin pie! My wife makes the pumpkin pies… I’m passing this along!

Keep swimming!

Kelly @ Inspired EdiblesNovember 10, 2012 - 8:10 am

Smidge, I saw this meringue pumpkin pie in Chatelaine too and I was drooling!! Your sky-high is even more stunning… truly, what a success. I cannot believe that you would give *both* pies away without duly sampling… so I’m guessing that’s the white bluff ;-) .

Mad DogNovember 10, 2012 - 9:26 am

Pumpkin and pecans with meringue!

My Italian SmörgåsbordNovember 10, 2012 - 9:49 am

hey woman :) now you gotta tell me what gingersnaps crumbs are as this pies do have an amazing crust and I love gluten-free alternative baking. thumb up for this post and recipe.

spreeNovember 10, 2012 - 10:36 am

That Sky High Pumpkin Pie photo belongs on the cover! (of your book, or Just a Smidgen Magazine!) And the pie itself? Well, we know where THAT belongs! (Nooo, not on my thighs! But if that’s the price one has to pay, oh welllll!) (Loved all your little white lies smidge, and of course, x you!) :) xx

BrittanyNovember 10, 2012 - 10:58 am

These pies are gorgeous! That maple one is my favorite. I am so excited for Thanksgiving, we are so desperately trying to keep up..we have the red Starbucks cups, does that count for anything?? ;)

vivekaNovember 10, 2012 - 11:05 am

Lies or not .. white or grey – there is no lies in those photos. Wow … I would have loved to have me in my kitchen team. Those indv. Pies I really crave now. Not fair at all, but I have some apple crumble that I will go for now. Barbara, you are Youre the most dangerous temptress there is.

TasteFoodNovember 10, 2012 - 11:05 am

Gorgeous – and nice thinking with the gluten-free option. Please pass a spoon.

kateshrewsdayNovember 10, 2012 - 11:42 am

Thank you for thinking of those who eat gluten-free, Barbara….my nephew Al loves home-made gluten free stuff. This will be a lovely recipe to try….

richardmcgaryNovember 10, 2012 - 12:38 pm

This looks incredibly delicious. Love the meringue and the gluten free sounds very intriguing. Once again, beautiful photos and scrumptious recipe.

SarahNovember 10, 2012 - 12:44 pm

Oh. My. Goodness. I want nothing to do with either of these. That’s not a white lie….it’s a flat out bold lie! I need these. I need these bad! Smidge, the pictures are gorgeous, and look and sound like everything to be thankful for! You’re amazing.

Also thankful for those red cups ;)

The Life of ClareNovember 10, 2012 - 12:51 pm

Those pies look delicious! We don’t really do pumpkin pie in Australia, but after reading so many posts about them, I might just have to give one a go!

Just Add AttitudeNovember 10, 2012 - 1:58 pm

I have totally forgotten the exact number but I read somewhere that we all tell quite a few white lies every day! Scary thought. These are drool-worthy recipes. I absolutely love anything with meringue on top. xx

hotlyspicedNovember 10, 2012 - 2:25 pm

What a gorgeous looking pie. I love the image of the slice of pie – it really shows how high that sky-high pie is. And don’t tell me you’ve given up swimming! As my coach used to say to me, ‘You’ve gotta push through the pain barrier’. I hope you give it another try. It’s a fabulous sport that’s easy to fall in love with when you can do it well – and yes, that does take a bit of practise xx

ChgoJohnNovember 10, 2012 - 3:30 pm

This is so not fair. I’ve come to accept your extraordinary cake baking & decorating skills, your photographic talent, and your gift with words. Must I add pies to the list, too? I mean, just look at these two beauties! They’re as near to perfection as any pumpkin pie could aspire to be. So not fair.

emmycooksNovember 10, 2012 - 4:21 pm

Suddenly I’m so glad we still have Thanksgiving (and lots of pie!) to look forward to! :)

writerwannabe763November 10, 2012 - 7:06 pm

They look so yummy…I’ve never had success with pumpkin pie but I think it’s psychological ..the very first one I attempted I bought a can of pumpkin pie ….one that my mother used but I never watched her make it I guess and after I was married I poured the contents of the can into a pie crust and baked it!….My poor little brother in law had a piece and his comment was….’sure is pumpkiny’….End of story….Diane

Barbara Bamber | justasmidgenNovember 10, 2012 - 10:59 pm

Too cute!! Your brother-in-law is so polite! My brother would say something similar and then give me that “look” and we’d both be doubled over laughing! xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:00 pm

I was glad to have an excuse to bake one, we didn’t make a pumpkin pie this past Thanksgiving. I really missed it!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:01 pm

That Chatelaine recipe was a keeper.. so you can blame them instead of me.. sometimes, it just takes being a good recipe reader/follower of instructions:D Other times, well..

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:02 pm

I haven’t given up at all.. in fact, I’m starting to quite like it (after only two sessions, lol!). I think it’s the whole “zen” thing about being in the water.. I will keep practicing! Those life guards give out good tips too! xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:03 pm

You know, I believe that’s true! Sometimes they do seem a necessary evil? xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:03 pm

That’s so interesting, I thought most Thanksgivings had Pumpkin, but I guess Apple would be an awesome choice too! What do you usually make?

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:04 pm

Haha.. those little red cups just cheer me up to no end.. no more blah boring white.. but pretty Red!! xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:04 pm

Thank you so much!! They were fun to make and not very difficult!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:05 pm

I think you could make a great gluten-free crust by crushing any good g-f cookie.. Then the crust problem is solved:)

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:06 pm

I sure would if I could!!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:06 pm

I adore apple crumble.. that would be very tempting as well:)

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:07 pm

Hahaha.. it sure does:)

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:08 pm

Some day I ought to put together a book for my kids.. although they’re not as interested in cooking at this stage of their lives;) Nooo.. not the thiiiiggghhhhssss!! xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:09 pm

I was thinking you could crush any Gluten-Free cookie and add butter then bake.. it would be worth experimenting I think. Thank you!!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:09 pm

I know.. one fellow was a wee bit disappointed when he found out it wasn’t whipped cream, but it tasted great:)

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:10 pm

It was fun to make, I didn’t change a thing.. and went to buy the magazine so I could try a few of the other recipes. It was a good month:) ps I did sample

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:11 pm

I am!! I love it!!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:11 pm

I know you do.. that’s why you’ve always got friends over and you make them the most wonderful food:) I’m still swimming! Now everyone here will keep me accountable…

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:12 pm

Haha.. thanks! xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:13 pm

Thanks so much! I do feel influenced by the seasons.. maybe because they’re so much more extreme here. Change of seasons means change of landscape, clothing.. and then the food:) xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:13 pm

Hahaha, yeh, me the big risk taker and all;)

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:14 pm

Oh, dear.. you and my brother!! Now they’re two of you! I couldn’t convert him either so.. I’ll just have to let this one go ;)

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:14 pm

I sure wish I could!! xx

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:15 pm

So far, so good, Tandy!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:15 pm

How do companies ship food.. one day I must try having a cake shipped here just so I can see how it’s done!

Barbara Bamber | justasmidgenNovember 10, 2012 - 11:16 pm

I like that.. “sweetly hungry”. xx

vivekaNovember 11, 2012 - 2:42 am

The crumble was good – and the custrad too. *smile
Yes, remembered that I haven’t eaten icecream for over 10 days. I must be sick … !!!!!

Promenade ClaireNovember 11, 2012 - 4:26 am

Ha keeping up !! No chance from this side of the pond :)
I’ll be totally honest – I’ve never made an american/canadian/ or other pumpkin pie. Savoury yes, sweet no.
With merrangue topping? Uh uh! I just can’t get my head around that one.
Picked yourself up yet …..
:) I look at them and think, yup that looks good/gorgeous/amazing…… and then that’s where it stops !
Now if I was offered a slice of pumpkin pie that would be different…… so I’m on way way round :)

KristyNovember 11, 2012 - 5:58 am

I had my first Starbucks gingerbread latte last week. :) Love this season!!! These pies are beautiful Smidge. The gingerbread cookie crust does sound quite good.

yummychunkletNovember 11, 2012 - 6:36 am

That gluten-free pie looks great!

Norma ChangNovember 11, 2012 - 6:49 am

If you put those 2 pies in front of me, I swear I would not touch them with my fingers. No, it is not a lie, but I will dig into them with my fork.

susielindauNovember 11, 2012 - 8:31 am

I like pie but these look amazing! Definitely going to try the Black Bottom! Yum!

Judy @Savoring TodayNovember 11, 2012 - 8:53 am

You are so right — gluten-free ginger snaps make a wonderful pie crust! Barb, your pies are beautifully done, so very inviting to celebrate. Happy Thanksgiving!

cravesadventureNovember 11, 2012 - 9:11 am

OMG – My pie dreams are real – YUMMERS! Thanks for sharing!

I LOVE pumpkin pie! Nice job!

mjskitNovember 11, 2012 - 9:06 pm

Both of these pie look delicious but I have to admit that the Black bottom pie really caught my interest. I’d love to taste it so I guess I’ll need to make it. :) Hope you had a wonderful Thanksgiving!

petit4chocolatierNovember 12, 2012 - 5:47 am

I have never had a pumpkin pie with meringue on top. And the ginger cookie crust sounds even better. These are my types of pies; love them!

Carolyn ChanNovember 12, 2012 - 6:47 am

Barb, that first photo made my entire mouth fill with saliva! Lie away!!

Gretchen O'DonnellNovember 12, 2012 - 7:33 am

As always, inspiring and gorgeous!

Coleen PatrickNovember 12, 2012 - 2:26 pm

I love pumpkin pie, meringue and gluten doesn’t like me–so you’ve just made my day with this recipe! :) YUM

Three Well BeingsNovember 12, 2012 - 3:42 pm

Oh goodness! Each one is spectacular! I was hoping one would emerge as the “favorite” but I can’t decide. Maybe I can make one or two now and follow up with Christmas! Pumpkin is a favorite in my family year-round. My son-in-law even asked for a pumpkin pie for his October birthday, and gingersnaps are my dad’s favorite cookie, so I think I must commit! I don’t know that I will ever bake as beautifully as you do, Barbara, but the recipes are so lovely I know they will taste good…and I don’t have to take photographs of my end result! :-)

RuthNovember 12, 2012 - 3:46 pm

Aaaah, that explains it! Canada is why us folks south of the border see Christmas decorations everywhere before Halloween even hits! Hehehe, just kidding :) . The pies look fantastic, Smidge, especially the one with all that fluffy meringue!

musingmarNovember 12, 2012 - 8:49 pm

It would never have occurred to me to put meringue on a pumpkin pie – it looks so lovely! Both pies sound and look so good, but I know I’ll never be able to serve one at Thanksgiving. That’s because my daughter the Tradition Enforcer is adamant that old recipes not be adjusted in any way when it comes to the apparently sacred menu for this holiday. On the other hand, I could make one of these pies any other time that I want!

Erin's DC KitchenNovember 13, 2012 - 1:56 pm

Oh my gosh that meringue is beautiful. Even though we haven’t had Thanksgiving here in America yet, I’ve already started my shopping, and even listened to some Christmas music this week. :-)

Helene Dsouza I Masala HerbNovember 14, 2012 - 1:03 am

Thats the prettiest pie so far today and in general I believe. Number 4 is for sure a lie, right? =P
Just looking at your pie makes me feel guilty and I have a feeling I gained a couple of cages by the minute. lol I d love to make it, so thank you for sharing it with us, its the right and only decision.

Heather @ SugarDish(Me)November 14, 2012 - 8:26 pm

You ARE in time for Thanksgiving! I love everything about BOTH of these pies! But I can’t keep up… my neighbors have put up Christmas lights and its got me all out of sorts. Not yet!! Thanks for visiting me at Carol Anne’s page– your site is gorgeous; I might be lost here for days! My gravatar’s not linking back properly… I’m at http://www.sugardishme.com. I’m don’t which to choose – lies or pies! Let me just say I love the sound of the crust – I think I just might have to give it a try.

Drat. I shouldn’t have read this – now I’m going to have to go to the shop and pick up a tasty treat..

This looks over the top delicious Smidge! I think I’m going to have to make this one. Yum! And Gluten free too! My youngest is gluten free. I should be but with my line of work it’s not always possible.

Smidge, when you rack your brain, genius happens! (case in point!) This goes on my list for the holidays. Love it! (and happy birthday Phil – you lucky lad!) Beautiful photos too Barb – the first one especially grabs me (and won’t let go!) xox

sallybrNovember 1, 2012 - 9:09 am

Happy Birthday to Handsome Phil! (you should definitely tell him I said so, at 19 compliments don’t spoil that much, right? ;-)

You know, I have that recipe from Giada’s bookmarked to “try soon” – you outdid her by a huge shot, if she sees your post she might consider quitting TV and giving you her spot… seriously

I like the modifications you made, and I intend to surprise my Phil with it sometime soon…. ;-)

I love your blog – the pictures are always so pretty… Thanks so much for sharing!

Food,Photography & FranceNovember 1, 2012 - 9:50 am

That looks fantastic. I’ve never heard of meringue powder. I make meringues every week as my wife is an addict! The other thing is that I always hear of people using cream of tartare – I’ve never owned any as I don’t know what it is or what it does. I normally add a pinch of salt to the egg whites, and add 32gms of sugar for each egg white. I have to try your cappucino panna cotta defiinitely.

Thank you, Michelle.. I love your blog as well! xx

Barbara Bamber | justasmidgenNovember 1, 2012 - 12:43 pm

Well, the jury’s out on the meringue powder for me, it didn’t taste nearly as good. But in this situation, if you’re not in the mood of “tempering” the egg white for food safety, it’s a lot faster and wouldn’t spoil as quick, I don’t think. I just read up on cream of tartar when I was making these.. it’s a substitute for the wonderful properties of a copper pot. Now I know what to wish for at Christmas time!! I think the copper does something to the molecules?? But you probably know better than I:D

Barbara Bamber | justasmidgenNovember 1, 2012 - 12:44 pm

ChgoJohnNovember 1, 2012 - 2:30 pm

Happy 19th to Phil!
Glad to read you’re both doing better, Barb, but you sure didn’t let a little virus stomp your creativity. These desserts are beautiful. Panna cotta is a wonderful dessert, no doubt, but to top it off with meringue and then torch it? Very nice! And I haven’t even mentioned the incredible presentation. Between this panna cotta and your cakes, Mercato West should give you a job as their Pastry Chef. You really are talented, Barb, and and it’s always a treat to come here and see what you’ve cooked up. Today was no exception.

niasunsetNovember 1, 2012 - 2:30 pm

I have already said happy birthday to your daughter, so Happy Birthday Phil!
This is something that suits me … have done 1000 and more 1000 panna cotta in my days, but never anything like this .. under a “roof”. This I have to try. Barbara, your recipe says tartar – is that the same as in tartar sauce ???? Doesn’t make any sense to me, but it doesn’t have to do that to work. Or is it something of your weird and wonderful products you have over there. Beautiful and so indulgent photos.

KristyNovember 4, 2012 - 7:20 pm

I hope everyone is feeling better! Happy birthday to your daughter and son!!! I love how you browned the edges of the meringue. It looks perfect!

Barbara Bamber | justasmidgenNovember 4, 2012 - 10:13 pm

Oh, dear.. Nooo, not tartar sauce.. It’s a powder here sold in a tiny box called cream of tartar, but if you don’t have it, you can make the meringues without:D

vivekaNovember 5, 2012 - 2:01 am

I knew it was something wired and wonderful again. I have heard about powder that keep the meringues stiff.

Beautiful photos, Smidge, and what a beautiful recipe! My four-year-old daughter is sitting on my lap and said, “Oh, yummy!” They sure do look it (!), though I think she’ll need to refrain from the espresso for a few years. Good health to all. xoxo

That is about as divine of a “cap” that I have ever seen Barbara. Love it!

Happy belated birthday to your son and your daughter
They are indeed lucky to have such a wonderfully talented mum

Happy belated birthdays! What a gorgeous meringue. I hesitate to use the torch, but your dish inspires me.
It is funny because I always ask my son (20) to help with fire if he is home!
I have renamed your dessert to “Heaven in a bowl”.

That’s an awesome Title.. I’ll remember that for the next fluffy meringue dish I make:)

These are GORGEOUS! What a great discovery.
And I have passed in my hand held kitchen torch for a real one (it’s small but I could solder pipes with it!)
I hope you have your body back… and have taken time to rest. x
