Emerald Green Edamame Dip

This brilliantly colored dip is just a bright burst of Spring in your mouth! My daughter wanted to bring something healthy to her friend’s birthday party so we knew we wanted to start with Edamame and some sort of dip. Emerald is the Panatone color for this year, so Smidge’s kitchen worked out a recipe…

One of my favorite dips, although I cannot remember now if the one I make has avocado in it… great addition if it doesn’t ;-)

Indeed, a perfect springtime appetizer!

Smidge! I’ve mentioned several times the past two days how i adore the many greens of spring…and now, with this, yet another green to swallow and savor! This looks gorgeous, and sounds scrumptious, and I’m pinning it and making it this weekend! (Several I know will want this too!) Love! (And, I suppose it doesn’t hurt that your photo is stunning!) I’ve missed you these past few weeks and will try to catch up! This was a beautiful place to start, my friend! xxx

I never knew you could make edamame into a dip. If it’s anywhere near as good as the beans themselves it must be delicious!

Erin @ErinsDCKitchenApril 11, 2013 - 6:39 pm

This looks yum, I need to try it. I love edamame but never have good ideas of how to use it other than in curry or rice.

Edamame makes a great dip.. we both agree on that! xx

Barbara Bamber | justasmidgenApril 11, 2013 - 8:57 pm

If you want the truth, Mad Dog, my daughter tasted it.. then just squirted a whole bunch in, so I underestimated for the recipe:D Wouldn’t want to make it screamin’ hot for some people, lol, but we love things really spicy!

Barbara Bamber | justasmidgenApril 11, 2013 - 9:01 pm

You must be getting all sorts of lovely greens for spring in your parts, spree.. so close to the ocean and all! And that much further south of us. We’re desperate for a little more green here, but all we get is brown, yucky brown and snow. So the only green is in our kitchen, lol! Thanks for stopping in, I’ve missed you.. but I know you’re up to something fantastical! xx

Barbara Bamber | justasmidgenApril 11, 2013 - 9:03 pm

It turned out so vibrant.. I guess it was the edamame being boiled? Even avocado doesn’t go that bright.. it was yummy for sure:D

Barbara Bamber | justasmidgenApril 11, 2013 - 9:06 pm

We thought of it for that exact reason, it needed a little creaminess in it, without avocado it’s a bit drier for sure. I was thinking plain greek yogurt, but we didn’t have any at the time. Thanks for stopping by Angie! xx

Barbara Bamber | justasmidgenApril 11, 2013 - 9:06 pm

Barb, your blog is a work of art, a thing of beauty! I always find joy and peace when I visit, not to mention a stirring of the taste buds. One of my goals is to make cakes as lovely as yours. Thank you for sharing!

Like you, I’m having a hard time keeping up with my blog reading, and I follow far fewer blogs than you. I agree, time with our loved ones is a higher priority, and in my case, also my health since I risk flaring up a wrist injury when I overdo it on the computer (or in the kitchen). I’ve been learning to manage my time better … Some blogs are like best friends (I don’t want to miss a thing) and some more like casual acquaintances (the occasional drop-in will suffice). But, as with all friends, it’s good to know that if life overtakes us and we fall out of touch, we’ll be welcomed back when the time comes as If we never left.

Happy new year to you, one of my blogging best friends! I always try to drop by Just A Smidgen because it’s always a soul-satisfying visit (and FYI, yes, I just wrote this with one hand because not commenting on this post is not an option!).

hotlyspicedJanuary 1, 2013 - 5:04 pm

Barb…I did the exact same exercise. Thought I was being very original! It was so interesting to discover what my most commented on (I did most commented rather than highest views) posts were. I’m not at all surprised that I see a lot of cakes in your Top 10. My resolution is to not be like a friend who keeps banging down your door being most unwelcome! Do enjoy your skiing – we are at opposite ends of the spectrum – I’m about to head out on a boat in a 32C day enjoying some swimming and relaxing and a wine or two xx

Barbara Bamber | justasmidgenJanuary 1, 2013 - 5:12 pm

Mar.. you’re always such a supportive and inspiring friend.. I love visiting your blog and seeing the pretty new dishes you’ve got going on in your kitchen:) I like your analogy of best friends and casual acquaintances for for blog reading! Somehow I’ll sort out my time.. I just hate missing anyone’s posts, I’m afraid I’ll miss something really important that has happened in their lives and I’d regret that. But yes.. I need to relax and remember we are all in this together:) Wishing you a better year.. especially with your poor hand, I just can’t imagine having to struggle to type with just one. I so appreciate you coming here to write these thoughtful words, Mar!! xxxx Barb

Thank you, viveka.. Hopefully I haven’t caused too much weight gain around the blogging universe, lol! But I am glad you’ve enjoyed the photos.. I’ve sure enjoyed reading your blogging as well.. Happy New Year to you!! All the best in 2013!! xx

Barbara Bamber | justasmidgenJanuary 1, 2013 - 5:32 pm

Just made a new resolution – am going to make one of those cakes in this post, this month! As usual, your words and photos are beautiful!

ruthehJanuary 1, 2013 - 6:13 pm

Wonderful post, lovely pictures to accompany your delicious recipes and good thoughts on the blogging scene.
I feel I have been remiss in commenting and reading the deluge of posts and with the vacation just now I wanted to enjoy my family time. I know sometimes the blog needs “tending” and I am sure I have disappointed or insulted some fellow bloggers by not accepting awards or deleting those I did receive. YIKES! I really haven’t made any resolutions other than to my trying to be less judgmental or critical of others and also of myself. That should take the rest of my life.
I wish you peace and health and much happiness in 2013. I thank you for your visits, likes and comments this past year on the blogs and am grateful you hosted Flat Ruthie so graciously. Thinking about the path of the blogs for the year but no set map yet. xxoo

Barbara Bamber | justasmidgenJanuary 1, 2013 - 6:19 pm

I guess it’s a good thing that we bloggers are so considerate and want to please our fellow bloggers.. I hope you do take time to focus on your beautiful family.. and I agree on the judgmental part.. My sister-in-law said once, “I try not to judge”.. so I’m trying to take that forward into 2013.. now if I could be less harsh on myself.. you’re so right.. that could take a life-time. I hope you have a wonderful time with your family and I am so looking forward to heading into 2013 with you. xx Barb
ps Flat Ruthie.. that was a pleasure:)

Barbara Bamber | justasmidgenJanuary 1, 2013 - 6:27 pm

EhaJanuary 1, 2013 - 9:05 pm

What glorious photos to introduce such an interesting post: even for a gal who truly does not eat cake :) ! Unlike many my New Year resolution list reaches out the door – and, from previous experience, a fair percentage will be kept! The most important may seem utterly selfish, but: after a number of too busy and oft too difficult years, I want to take more time out for me, whether it is to plant a garden bed, read a book I meant to six months ago, pick up my latchhook and rug long left in abeyance or go for a long twilight walk more than once a week . . . or just take time to sit in the sun [difficult for an A-type like me] and daydream . . . I think it’s time . . .

TandyJanuary 1, 2013 - 10:15 pm

Blogging can never replace real life! My resolution is to trust myself more :)

Keeping up with all the blogs I follow has always made me feel guilty because I can never keep up. I really loved your friend’s comment Smidge!
You are welcome to stop by my blog whenever you have the time or when something I post seems interesting enough. Please don’t feel pressured to comment.
As for your round up, I am always left speechless at your talent, creativity and attention to details.

Excellent post. Especially on time management and blog commitments. I have been giving this a considerable amount of thought over the past couple of weeks, especially since I have the opportunity to explore academic opportunities in the next few weeks. While each must find our own balance, we can learn a considerable amount from each other. Thank you for your insights. They are invaluable to me.

Lovely pics of delicious cakes. Why and how are the large cakes so tall? I don’t have cake tins that size and I’m thinking that I should.

petit4chocolatierJanuary 2, 2013 - 4:10 am

Gorgeous, gorgeous, and beyond gorgeous! You are incredible. Your love and passion for food says it here, hands down. I agree, the blogging world are like our distant friends. I enjoy every single word, sentiment, drop in, and smile. You can stop by anytime, and I will definitely be stopping by here, {{hugs}}.

Just Add AttitudeJanuary 2, 2013 - 4:25 am

I love this thoughtful post so full of wise words. And I have always been grateful for the thought-out comments that you have left on my blog but I am also very glad (for you) that you have decided to become an occasional visitor to other blogs as I cannot imagine how much time reading and commenting on hundreds of blogs took. I will pop in here from time to time to say hello – it would be lovely if you visited me occasionally but I hope you won’t feel under pressure to do so. I enjoy your blog for many reasons (your way with words, the beautiful images the lovely recipes … ) but mostly I like the way your kind personality shines through like a beacon. Many good wishes for the New Year from across the ocean. B xoxo

spicegirlflaJanuary 2, 2013 - 6:42 am

You have just brought a huge sign of relief to my life! I’m so glad you shared your thoughts on reading blogs and “life”. I fear I’m also not current oon my reading and trying this year to do better and develop a system to do so as I realize I do miss many wonderful posts! One of my resolutions is to think more thru my heart and less thru my mind!
Best in all ways to you in 2013!

Sue Schlabach 129twigandvineJanuary 2, 2013 - 6:51 am

I know I clicked on all of those. And made several. I wish for you a marvelous 2013. I’ll look forward to seeing what you cook up, and the poetry and wisdom you serve as well.

I love that I’m not the only one who feels guilty about not reading all the blogs I should. It’s terribly difficult to balance and I, like you, don’t entirely know how. (But I totally agree with you about the frequent bloggers!!) I don’t enjoy feeling guilty all the time…but there it is. Hopefully they will forgive me!

bitsandbreadcrumbsJanuary 2, 2013 - 9:50 am

Some nice ideas in this post. I, too, find it difficult to get to read everyone’s posts so have decided to drop in as often as I can and not worry so much about it. Love your countdown…so many beautiful images and dishes… and cross country skiing sounds like such a grand way to start the new year, if we just had snow here! Happy 2013, Smidge, and may it be the best year ever for you!

Happy New Year, Barb! I think it was sage advice you received, I too would love to read more than I do, but there are those that I make sure I visit because I miss them. :) Ah, I remember those cakes! Especially the rose cake, so beautiful, perfect for celebrations. I have no resolutions for this year, well, other than getting the Christmas decorations down before Valentine’s Day. ;) Abundant blessings to you in 2013!

I believe it must be true that if you have a busy life with children and other regular activities it must be very difficult to catch up on reading blogs… Some I guess have it as one of their regular routine activities but I still don’t know how they do it. Now me, I’m retired and therefore have more time than most but even then sometimes it is hard to keep up. I have come to know and follow so many interesting and amazing people. Having said that this year I have resolved to include reading books which I haven’t done for quite some time, so the reading of blogs might take longer to do…..Diane

mjskitJanuary 3, 2013 - 11:18 am

What a beautiful post! I haven’t made any resolutions this year which is new for me. I’m thinking of just sliding into 2013 and see what happens. :) Happy New Year my friend!

wendy@chezchloeJanuary 3, 2013 - 11:23 am

Barb, I don’t think this is the first time you’ve summed it up so well. I love blogging for the creative outlet, the feeling that I’m keeping a living resumé and most of all, the people I’ve virtually not only crossed paths with but with whom I feel a true sense of friendship. I miss what’s happening in their lives when I’m not regular but I can’t always keep up once a day or even several times a week with each person but I do my best without sacrificing my “real time” life.
It’s also fun to see a review where I can say “oh yes… I remember that one…. oh and that one… and that one too!
Best to you and your start into the new year. xox wendy

Happy New Year, Smidge! I was so flat out in December that I didn’t get to visit many blogs at all, but it was a treat to pop in on this one and to see that you understand exactly how I felt! Thank you.. :)

Carolyn ChanJanuary 3, 2013 - 10:09 pm

Barb, first of all, HAPPY NEW YEAR to you and your family ! Hope you had a wonderful start to 2013 ! And your post really struck a chord with me – it’s been mental and I have really missed being able to stop by my favourite blogs, say hi, have a cup of tea :) it’s comforting to know that I am not alone in feeling that way !

And for the record, every time I visit your blog it’s like you’ve just popped the kettle on. Thanks for all your gorgeous poetry and ideas, you really do inspire me !

I s’pose this explains why I got an email that you unsubscribed? Life gets crazy, reading takes time… I understand.
I’ll miss ya though!

Barbara Bamber | justasmidgenJanuary 4, 2013 - 10:22 am

Oh, no! Not at all..Instead of using WordPress, I had subscribed to everyone by logging out and subscribing via an “outside” email (hotmail) account. For some reason I stopped receiving notifications for all WordPress sites in my hotmail inbox. So now I have to log out of WordPress and and go to everyone’s sites and subscribe again. It looks like I’m subscribed, but I’m not if that makes sense?? That’s my lovely project this week, arrrgh:) xxx

Geni - Sweet and CrumbyJanuary 4, 2013 - 2:43 pm

You said what I have been thinking lately. For awhile, blogging was taking up space where my “real” life should have been occupying. However, I have blogged much less, lived much more recently and have a found a better balance for the time being. Last year, my resolution was to “B. Mediocre”. I have accomplished that! :) It WAS so nice to hear from you like a friend I hadn’t seen in awhile…your friend is so right. I like her and will try to think of commenting and reading blogs in this new way. Great idea! Your cakes have ALWAYS ALWAYS made me crazy with happiness.

They are just smaller tins I found at Williams Sonoma.. then stack ‘em up:D

Heather @ SugarDish(Me)January 5, 2013 - 5:25 am

I love my wordpress.com reader but since my site is hosted elsewhere I have to comment on wp.com blogs in a weird way, so I understand. It’d definitely a line to walk and sooooooo many people that posted religiously when I first started have quit altogether for lack of balance. Find what works for you, though, because your blog is great! And pretty. It’s really pretty :)

musingmarJanuary 5, 2013 - 7:09 pm

Thanks for your support Barb. Glad to report the flare-up in my wrist has died down and I’m back to two hands on the keyboard. It sure can be frustrating though, when I’m not able to do everything I’d like to do! Perhaps one of my resolutions for the new year could be to accept my limitations wit more grace!

LesleyJanuary 6, 2013 - 7:01 am

I totally understand what you are saying about writing faster than you read, I’m in the same position. And I think your friend’s words were beautifully expressed.
So thank you for being a blogging buddy throughout 2012, I remember so well many of these treats you served up. Somehow I missed the asparagus tart – I’m off to remedy that!

Just gorgeous, Barb! I’m faced with the same blog reading dilemma. This morning I’m going through 380 blog emails in my inbox. Yikes! And you’re right, it’s impossible to read them all thoroughly. I haven’t really made a New Year’s resolution per say, other than the typically “I’m going to get more exercise this year” thought. Ha! I think now my resolution should be not to stress over my inbox. Thanks! :)

Smidge’s Granola

Still lots of Autumn “nesting” going on over here in the Smidgen kitchen. The bottomless granola bin ran dry and so it was time to whip up a new batch. Not that this was any trouble, the smell of toasting granola, maple syrup, honey and cinnamon is always heavenly on a Sunday afternoon. It was…

Rufus' Food and Spirits GuideOctober 5, 2011 - 7:59 am

I’ve never made granola and like that you use products I can find at my regular grocery.

ceciliagOctober 5, 2011 - 8:37 am

I make my own too but we call it muesli, so i was interested to read your recipe. isn’t it the best! c

Just A SmidgenOctober 5, 2011 - 9:07 am

Yup, that’s the beauty… you can just open packages and mix:)

Just A SmidgenOctober 5, 2011 - 9:09 am

I always wondered about the difference between granola and muesli? Here our muesli is uncooked and milk gets stirred in… and I think left overnight in the fridge? Not sure… I shall have to investigate:) I’d love to see your recipe for it. Have you posted it yet?

kathryningridOctober 5, 2011 - 9:46 am

The version in this household is a “chewy granola bar” version, but grain-free (as I’m finding increasing trouble digesting grains)–so, all nuts and seeds and a little dried fruit. Since it’s a chewy version, it’s uncooked, or rather, refrigerated to set up before cutting into bars. But as with yours, Smidge, I love it crumbled up into some yogurt and drizzled with honey too. The main thing is, it gets me to eat something in the mornings when I’d often be too lazy otherwise, especially because with all of the nutty and fruity treats in them I have to be honest: they’re breakfast candy bars. And I’m all for starting the day with dessert. It sounds like your granola is equally delicious!

CourtneyOctober 5, 2011 - 1:15 pm

I never have, but have always wanted to make my own granola! Thanks for the recipe!!

Just A SmidgenOctober 5, 2011 - 4:25 pm

That sounds so delicious! Today I ate a gluten free bar made with peanut butter, almonds, flax seed, coconut, honey topped with a layer of chocolate. It’s was a no cook bar and so decadent for gluten free:)

Just A SmidgenOctober 5, 2011 - 4:26 pm

It’s an easy one to try;)

cityhippyfarmgirlOctober 5, 2011 - 7:26 pm

Yup, we call it muesli as well here, and the milky leave it in the fridge kind is bircher muesli. Love it all in any form. I’m curious, that is a huge batch to make up, how long does that last you?

Just A SmidgenOctober 5, 2011 - 9:36 pm

Bircher Muesli, that sounds so delicious! Well, the cool thing about having a blog, is that I can look back and see when I posted this:) So I made it in March of this year. There are three of us eating it for breakfast, but, of course, not every day, so it does keep well in the freezer:)

thefooddoctorOctober 7, 2011 - 2:01 pm

I make my own granola too but yours is much richer and I love all the ingredients in it… I need to go shopping soon!

Just A SmidgenOctober 8, 2011 - 6:20 am

Thanks, I think it’s actually dessert:)

Misk CooksOctober 29, 2011 - 2:52 pm

Please pardon my jumping in here….The one that’s refrigerated overnight is Bircher’s Müesli. There’s a recipe for it on my blog if you’re interested. My understanding is that granola is sweetened but müesli isn’t. You have a lovely blog here, by the way, and I’ve enjoyed reading your posts. Thanks for subscribing to mine, too. :)

Just A SmidgenOctober 29, 2011 - 3:04 pm

Oh, yes, I’ve heard of Bircher’s… would love to have some about now:) A bit peckish here! Thanks for your compliments. I, too, love reading your blog and shall have to find your muesli recipe:)
