I know I promised you a cake..
but these white chocolate dipped strawberries turned out so very beautiful and filled with Christmas cheer
that I had to show you!
The sugar reminded me of snow crystals so I decided to call them
Snowberries

They were so easy to make and stunning on the dessert table
{ next to the pink cake I will show you soon }
Just pick up a block of good quality white chocolate..
mine was a massive brick of Roger’s white baking chocolate.
As a young girl we would visit their heritage storefront shop in Victoria, BC.,
so these chocolates conjure up all sorts of fond memories.
The first Roger’s Chocolates were made by Charles “Candy” Rogers in 1885,
so you know you’re buying a quality product.

Carve off a large chunk and put it in a pyrex or microwave safe bowl.
Heat in 10 to 15 second bursts, stirring each time until the chocolate has melted.Once you only have small bits in your cup, keep stirring and the heat from the melted chocolate will finish melting those.

Hold your clean and dried strawberries by their stems and dip.
Then line them up on a baking sheet lined with waxed paper and sprinkle with Wilton white sprinkling sugar then let them harden.
I popped mine onto a plate when I was done and in the fridge until just before my guests arrived.

- 8 oz white baking chocolate block
- 16 oz (1 lb) strawberries, rinsed and dried
- Wilton white sparkling sugar
- Ensure your berries are thoroughly dried.
- Cut off a 1/4 of your chocolate block and put it in a pyrex measuring cup or a microwave safe bowl. Melt in short bursts of 10 to 15 seconds, stirring each time. Be careful not to over cook or the chocolate will burn. Do not allow water from a spoon, etc to get into your chocolate or it will seize. If small bits are left, keep stirring and the heat from the melted chocolate will melt those.
- Holding your strawberry by the stem, dip it into the chocolate and lay on a baking sheet lined with waxed paper. Sprinkle sugar over.
- Once all are done, put the strawberries into the fridge to set. Move to a glass dish to serve.

I love these snowberries! they look gorgeous. I usually make these with dark chocolate but I must say that I like the effect of white chocolate on strawberries better.

I am very happy to report that instead of me wearing boots and flannel wear and gortex gloves, I am quite comfortable in my sleeveless dress.
