Best Ever Sweet Spring Scones

Spring!

Robins are nesting and the 4 mallard drakes have returned to our pond, if we’re lucky we will have ducklings waddling around soon!

I filled my little front garden for the first time with so many varieties. It will be interesting to see which ones like this space and come back next spring. I’m not sure which plants like an acidic soil under massive evergreen boughs!

Robins, ducks, budding trees and flowering plants go perfectly with these fluffy scones. Breakfast couldn’t be easier with the most basic ingredients on hand. You could add dried fruit or nuts but I like these plain with strawberry jam and butter.

  • 3 cups all purpose flour
  • 1/2 cup granulated sugar
  • 5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter, cold
  • 1 egg, beaten
  • 1 cup milk
Instructions
  1. Preheat oven to 400F.
  2. Line a baking sheet with a silpat liner or parchment paper.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder and salt. When measuring the flour, whisk it with a fork before measuring to make a lighter scone.
  4. Using a large grater, grate the butter into the flour mixture and then finish cutting in the butter with a pastry blender.
  5. Measure the milk into a measuring cup and add the beaten egg to the milk. Mix to blend.
  6. Make a well in the center of the flour and butter mixture.
  7. Slowly add the wet ingredients to the dry ingredients, folding gently, do not over mix. If needed sprinkle additional milk by the tablespoon. The amount of milk you require depends on the flour you use.
  8. Before it's fully blended, sprinkle a bit of flour onto the countertop, lift the mixture out, knead once or twice to finish mixing the ingredients then press into a 1/2" round disc. Do all of this with the minimum amount of handling to ensure light, fluffy scones.
  9. Place on your prepared cookie sheet. Using a large, sharp knife, cut the dough into 6 wedges.
  10. Bake 15 minutes or so until the dough is baked through and golden brown.
