Sweet Harissa and Halloumi Dip
 
 
Ingredients
  • 1 tbsp unsalted butter
  • Corn kernels (about 4 fresh white/yellow corn cobs)
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 1 tbsp unsalted butter
  • 1 cup finely chopped onion
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup chopped green onion
  • 1 tsp harissa
  • 2 minced garlic cloves
  • 1/2 cup low-fat greek yogurt
  • 1/2 cup low-fat mayonnaise
  • 4 ounces halloumi cheese, shredded
  • 4 ounces sharp cheddar cheese, shredded
  • Tortilla chips for dipping
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Melt 1 tablespoon of butter in a large skillet over medium-high heat. Stir in the corn, salt, and pepper. Cook and stir until the kernels turn a light golden brown, about 5 minutes. Transfer to a bowl. Melt the second tablespoon of butter in the same skillet. Add the onions and bell peppers. Cook and stir until the onions are translucent, about 2 more minutes.
  3. Stir in the green onions, harissa and garlic and cook for a further 2 minutes, or until everything is softened. Stir into the corn mixture.
  4. Add the yogurt, mayonnaise, 1/2 of the Halloumi Cheese and half of the cheddar and mix well. Spoon into an 8-inch baking dish. Sprinkle the remaining cheese over top. Bake until bubbly and golden brown, about 10 to 12 minutes.
  5. Serve hot with tortilla chips.
