Gluten Free Pumpkin ~ Applesauce Granola

Ingredients
  • 5 cups of large flake oats, uncooked
  • 3 cups chopped pecans
  • 1 cup roasted pumpkin seeds
  • 1 cup sunflower seeds
  • 1 cup unsweetened coconut
  • 1/2 cup dark brown sugar
  • 4 teaspoons Pumpkin Pie Spice
  • 1 teaspoon sea salt
  • 3/4 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1/4 cup honey
  • 2 tbsp sunflower oil
Instructions
  1. Heat the oven to 300F.
  2. In a large bowl, stir together the oats through to the sea salt.
  3. I a medium sauce pan, mix together the pumpkin puree through to the oil. Warm just until mixture is heated through and honey is melted.
  4. Spoon the pumpkin mixture over the oats mixture and stir to blend.
  5. Spead in a thin layer over parchment covered cookie sheets.
  6. Bake until golden brown and crunch, for about 40-45 minutes. Make sure to stir every 10 minutes or so.
  7. Store in an air tight container or freeze in airtight plastic bags.
Notes
If doubling the recipe, use 1 kg bag of large flake oats
