Indonesian Slaw with Spicy Peanut Dressing
 
 
Ingredients
  • Salad
  • 1/2 large cabbage, thinly shredded
  • 1/2 pineapple, sliced into thin strips
  • 2 carrots, peeled and shredded
  • 1 red bell pepper, diced
  • 3 green onions, diced
  • 1 cup cilantro, chopped
  • handful peanuts, roasted, salted and chopped
Dressing
  • 1/3 cup all natural peanut butter, smooth
  • 1/3 cup rice wine vinegar
  • 2 tbsp tamari sauce (or soy sauce)
  • 2 tbsp brown sugar, packed
  • 1 tbsp Sriracha sauce, more or less to taste
  • 1 large garlic clove, minced
Instructions
  1. Toss all salad ingredients from the cabbage to the cilantro into a large bowl. Cover and refrigerate if making in advance.
  2. To make the dressing, measure all ingredients into a magic bullet or blender and blend on high until the dressing is completely blended. Cover and refrigerate separately if making in advance. This salad is best served the same day you've made it.
  3. To serve, pour over the desired amount of dressing then toss and serve immediately with a handful of chopped peanuts sprinkled over.
Notes
I think there are so many other ingredients you could toss into a salad like this bean sprouts, sugar snap peas, etc.
