Toss all salad ingredients from the cabbage to the cilantro into a large bowl. Cover and refrigerate if making in advance.
To make the dressing, measure all ingredients into a magic bullet or blender and blend on high until the dressing is completely blended. Cover and refrigerate separately if making in advance. This salad is best served the same day you've made it.
To serve, pour over the desired amount of dressing then toss and serve immediately with a handful of chopped peanuts sprinkled over.
Notes
I think there are so many other ingredients you could toss into a salad like this bean sprouts, sugar snap peas, etc.
