Gluten~Free Mulligatawny Turkey Meatloaf

Ingredients
Turkey Meatloaf
  • 1/2 cup uncooked jasmine (or white) rice
  • 1 kg turkey or chicken, ground
  • 1/2 cup sweet white onion diced
  • 2-3 small sweet carrots grated
  • 1-3 celery stalks diced
  • 3 tsp curry powder
  • 1 tsp thyme
  • 1 tsp Chinese 5 spice
  • 1/2 tsp ground ginger
  • 1/2 tsp coriander
  • 1 small apple diced
  • 2 tsp sriracha, or to taste
  • 1 egg, whisked
Glaze
  • 1/2 cup chili sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 2 tbsp brown sugar
Instructions
  1. Preheat oven to 325F.
  2. Lightly spray two loaf pans with cooking spray.
  3. Cook 1/2 cup jasmine rice in water as per instructions. Set aside to cool.
  4. In a large bowl, combine the ground turkey through to the egg, mixing until well blended. Add the rice and combine thoroughly.
  5. Press into the prepared loaf pans and put into the oven to bake for 25-30 minutes, or until the center is no longer pink or raw. (I just poke a knife into the center to check.
  6. About 5 minutes before the turkey meatloaf is done, mix together the glaze ingredients in a small bowl and spoon over the meatloaves, spreading to cover the tops completely. Then finish baking.
