Power Protein Oatmeal Bowl

Ingredients
  • Heaping 1 cup oats
  • 1 cup almond milk
  • 1 cup water
  • 2 tbsp chia seeds
  • 4-5 dried apricots, chopped (to taste)
  • 1/3 cup liquid egg white
  • Topping
  • berries
  • bananas
  • maple syrup
  • walnuts
  • granola
  • dried fruit
Instructions
  1. Mix the oats, almond milk, water, chia seeds and apricots together in a saucepan and cook over medium heat until oats have almost cooked through.
  2. Then add the liquid egg whites very gradually, stirring well to mix through so that the egg doesn't separate from the oats. You don't want the egg to cook separately from the oats.
  3. Cook for about 5 minutes over medium heat, stirring constantly until you have the consistency you prefer. If you want creamier, thicker oats, cook the egg and oats mixture a little longer.
  4. Top with any of the toppings you wish and enjoy!
