Healthy Vegan Chocolate Chip Cookie

Ingredients
  • 1 cup mashed banana (3 small)
  • 1 1/4 cup oats, gluten-free if desired
  • 1/4 cup almond butter
  • 1/2 cup vegan chocolate chips, chocolate chips or dark chocolate cut into chunks
  • 1 tsp vanilla extract
  • 1 tsp salt
  • walnut halves
Instructions
  1. Preheat oven to 375F.
  2. Mix together all ingredients, stirring until well blended and the batter comes together well.
  3. Drop on parchment lined paper, press gently down and put one whole walnut half in the center.
  4. Bake for about 10-15 minutes or until lightly browned.
  5. Remove to a cookie sheet to cool.
