Chipotle Lime Sauce
 
 
Ingredients
  • 1/2 cup mayonnaise
  • juice of one lime
  • 1 1/2 tbsp cilantro, diced
  • 1 - 2 chipotle peppers coated with adobo sauce, to taste
  • 1/2 tsp smoked paprika
  • 1/8 tsp salt
  • pepper to taste
Optional
  • avocado
  • scallions, chopped
  • monterey jack cheese, grated
Instructions
  1. Combine all ingredients together from the mayonnaise to the pepper and adjust the level of heat by adding more chipotle peppers as desired.
  2. Top fish taco with sauces, avocado, scallions and monterey jack cheese.
Notes
Chipotle peppers in adobo sauce can often be found in the Mexican food aisle in a 200 gm tin.
