Cowgirl Chunky Peanut Butter Cookies {gluten-free ‘n vegan}
 
 
Ingredients
  • 1 cup almond flour (blanched)
  • 1/2 tsp coarse salt
  • 1/4 tsp baking soda
  • 1/2 cup chunky organic peanut butter
  • 1/4 cup maple syrup, organic
  • 2 tbsp earth balance, softened at room temperature
  • 1 tsp vanilla
Instructions
  1. Preheat oven to 350° F.
  2. In a medium bowl, whisk together the flour, salt and baking soda.
  3. Fit your mixer with a paddle and blend the peanut butter, maple syrup, earth balance and vanilla until well blended.
  4. Set the mixer on low and gradually blend in the dry ingredients.
  5. Scoop by spoonful onto a baking sheet lined with parchment paper or silpat. Press gently with a fork.
  6. Bake for about 10-12 minutes, just until the edges are browned.
  7. Makes a baker’s dozen.
