Cowgirl Chunky Peanut Butter Cookies {gluten-free ‘n vegan}
- 1 cup almond flour (blanched)
- 1/2 tsp coarse salt
- 1/4 tsp baking soda
- 1/2 cup chunky organic peanut butter
- 1/4 cup maple syrup, organic
- 2 tbsp earth balance, softened at room temperature
- 1 tsp vanilla
- Preheat oven to 350° F.
- In a medium bowl, whisk together the flour, salt and baking soda.
- Fit your mixer with a paddle and blend the peanut butter, maple syrup, earth balance and vanilla until well blended.
- Set the mixer on low and gradually blend in the dry ingredients.
- Scoop by spoonful onto a baking sheet lined with parchment paper or silpat. Press gently with a fork.
- Bake for about 10-12 minutes, just until the edges are browned.
- Makes a baker’s dozen.
