Howdy, Partner!!
This year my hometown, Calgary, is celebrating the Calgary Stampede’s 100th Year Anniversary. This means a wild 10 days of bronc-bustin’ fun! It all kicked off yesterday, since everyone always gets the morning off work to watch the Stampede Parade (yours truly was in it once.. live here long enough and you’d be riding on a horse or a float too!)
I have so many great childhood memories that started out with white cowboy hats with plastic whistles, grandstand shows, rides, and mini-donuts. In our 20’s we’d kick off work around noon (everyone does) every day and head to the Silver Slipper Saloon to two-step our way into a hang-over.. and trouble… and do it all again the next day.. for 10 days straight.
We’ve always been at the lake for most of the last 20 summers, but this year we’re home! Cowboys has reopened (famously visited by Prince Harry a few years back) and we spent a beautiful Friday night in the sun just outside the Cowboy’s tent visiting people we’ve known but hadn’t seen for.. well, about 20 years!
I’m looking forward to going down to the grounds this week to see the Indian Village, Draft Horses, 4-H livestock displays, and, of course, the rodeo… and the

(what is it about a cowboy hat that makes every man look.. well, irresistable!)
Cowgirls around here wear boots, a fun dress, jean jacket or jeans.. it’s a casual version of Western Wear and not such a “costume”.. in fact I’ll be wearing these Old Gringo’s year-round with sundresses, I reckon…
Once you stomp your way down to the grounds, you’ll find out that most everything is just “deep-fried”.. some foods to try: deep-fried pickles, deep-fried wagon wheels, red velvet funnel cakes, cotton candy cupcakes, pulled-pork poutine..
But, I want to fit into my jeans.. so I decided it’s time to jump on the “Gluten-Free” bandwagon, er, chuckwagon and am bringing you one of the best cookies I’ve made in a long time. Bring along a few of these and I can resist those deep-fried pickles!
Blanched almond flour was found in the refrigerated section of our Blush Lane specialty organic supermarket. They also sell a “butter” substitute called Earth Balance and the absence of eggs in these cookies makes these Cowgirl Cookies Vegan as well. The maple syrup adds a nice touch of Cowgirl Flapjack sweetness (that recipe to come soon).. and with only 7 ingredients these are a cinch to bake! The resulting cookies are soft with a light peanuty texture, without the rich, sugary and dense bite of a traditional peanut butter cookie. For all you Cowboys out there (have I mentioned how totally awesome I think Cowboys are?) I’ll be bringing you a dangerous Jack Daniel’s fudge recipe soon…
- 1 cup almond flour (blanched)
- 1/2 tsp coarse salt
- 1/4 tsp baking soda
- 1/2 cup chunky organic peanut butter
- 1/4 cup maple syrup, organic
- 2 tbsp earth balance, softened at room temperature
- 1 tsp vanilla
- Preheat oven to 350° F.
- In a medium bowl, whisk together the flour, salt and baking soda.
- Fit your mixer with a paddle and blend the peanut butter, maple syrup, earth balance and vanilla until well blended.
- Set the mixer on low and gradually blend in the dry ingredients.
- Scoop by spoonful onto a baking sheet lined with parchment paper or silpat. Press gently with a fork.
- Bake for about 10-12 minutes, just until the edges are browned.
- Makes a baker’s dozen.
Can’t eat the cookies but love the boots 🙂

I’m ready to make these, with butter instead of Earth Balance (Nothing wrong with Earth Balance, but I use what I have). I’ve been using a lot of ground almonds lately in gluten-free things — it only takes a minute or two to blanch raw almonds, pop the skins and grind them in the blender. And I covet your cowboy boots (but they are probably not my size).
Absolutely they could be made with butter.. I love that you make your own raw almond flour.. do you have to watch not to over-grind and end up with almond butter??
I haven’t had that problem, Barbara, but I use a blender or a mortar and pestle, rather than a food processor.
Barb, would you believe that I once worked at Dusty’s Saloon for Stampede? It was quite an experience! Love the boots — I can imagine they will get lots of use two-stepping! Maybe if I make the cookies I will feel like I am there again!

The Stampede has always sounded like a great deal of fun! You gotta love a town that throws a party that lasts 10 days. These cookies look good & crunchy and your boots! Well, they’re the nicest I’ve seen since I last gazed upon a map of Europe! 🙂

I love the ingredients in these cookies, Smidge! They sound really terrific and I’m only sorry I’m reading this recipe so late at night…you’ve really stimulated my appetite! My boss has been to the Stampede several times and has told me how wonderful it is. I’d love to visit one day, and I really enjoyed your personal telling of how it has been a part of your life for so long. It is a wonderful piece of cultural history that sets Calgary apart! 🙂 Debra

This sounds like my kind of fun! Not that I’ve any experience, except from owning beautiful cowboy boots. I used to have a pair of beige, navy blue and red suede ones. And a pair of red, beige and pink ones in leather. Too many, I know and I miss them, :). Love yours…

I keep going back to look at the pictures because my eye is drawn to the beautiful piece of embroidered fabric they are resting on – I love it. This gluten free recipe is timely as I am thinking of trying to forego wheat and diary in my diet for a short time. I need to work up the courage and these cookies would be a good intro. 😉 xo
I loved that one too.. I’m working on an embroidered tea towel myself, but it won’t be anything like this one, that’s for sure!! I’m finding it’s easy to go gluten-free, not so easy to be vegan.. substitutes for eggs aren’t the easiest..

The boots are incredibly beautiful! A pity that where I live only has summer all year round, won’t be able to get myself a pair of boots to wear!

These sound delicious! My favorite peanut butter cookie recipe is the one that’s just peanut butter, sugar, and an egg, and I recently made them with almond butter instead (and chocolate chips of course!) – sooo good. I bet these would be awesome with almond butter, too! Enjoy the Stampede – one of these years I will make it to Calgary to check it out!

My nephew Brian used to live there, we visited last year in June. He’s moved back to Toronto now but is out there visiting for Stampede! I’m sorry we missed seeing Stampede, but hotel prices prohibit a visit these days. These cookies look wonderful. I have a gluten intolerant friend and I’m sure she would love them. Love your boots. Well.. I am the person to ask for sure!! I substituted Almond butter and it didn’t work out.. the first time! Because it looked so runny I added Coconut Flour (big mistake) because that stuff could be used to make sculptures with it hardens up so much, lol!! I’m still working on one, though..
