they say eggs are a hang-over cure
throw in a few veggies for good measure, I suppose
but something’s missing…
that’s better.. a pretty flower on the plate
hmmm, what else is missing?
oh.. yes! a latte.. please don’t forget the extra shot

I think this frittata eggy thing might just have to be supper tonight instead…

Breakfast in Bed Frittata
- 12 eggs
- 2 cups milk
- 2 tbsp butter or margarine or 2 strips bacon
- 1 tsp salt
- 1/2 tsp pepper
- 1 yellow pepper, diced
- 1 small zucchini diced
- 5 green onions chopped
- 2 thick slices ham, diced
- 2 cups Cheddar Cheese, shredded
- Preheat oven to 350° F.
- In a large bowl, beat together eggs and milk. Season with salt and pepper. Pour into a buttered 11?x7? glass baking pan.
- In a frying pan, fry up a bit of bacon, and set aside. Crumble bacon when cooled. Alternatively, heat butter or margarine. Add diced yellow pepper, zucchini and onions to the frying pan and fry, stirring until vegetables have softened and slightly browned.
- Pour the egg mixture into the baking dish. Spoon and sprinkle the vegetable mixture over top of the egg. Sprinkle ham (and bacon if using) over top and then finish with a generous handfuls of cheese over the entire top of the frittata.
- Bake, uncovered for about 25-30 minutes or until the egg is set and a knife inserted in the center comes out clean.
Oh yummy! Got me wanting to get up and cook.. some Irish Breakfast tea will do 😀 thanks for such a great dish!

Oh Smidge, this is sooo lovely. This whole morning is exactly how I love to spend the weekends – and it’s always the most pleasurable time. In fact, just reading this now, at my desk, brought such a calming, wonderful feeling to me. I love making frittatas. I’ll have to remember to place a flower on my plate too now!

I really enjoy a good frittata, Smidge, and you’ve prepared a great one here! To me, they are the perfect meal and can be easily served for breakfast, lunch, or dinner. Now, that recipe of yours would be enough for most bloggers to present but, once again, you surround your recipe with beautiful photography and wonderful commentary, making your post a delight to read. This looks like a beautiful hangover breakfast, but I’m with you…go for the extra sleep and have breakfast for dinner. My mom used to serve us breakfast at dinner every now and then too. It was always such fun! And now my kids love it. 🙂

What a beautiful start to the day Smidge. I would love to wake up and be presented with that bowl of fresh fruit and the frittata. Not sure it’s going to happen though. Certainly not today. Must get up out of bed and make myself something much less exciting like a piece of vegemite toast! And yes, frittatas are a great start to the day or a wonderful comforting supper.

Dinner Divine! What is the difference between a frittata and a quicke?
oh my…I meant quiche…
They are so similar, I very often think of a quiche as having a pie crust and the frittata is baking right in a pan. This one is in a baking dish, but my friend used to stir up veggies in a cast iron, pour the eggs on top, sprinkle with cheese and put it in the oven.. The baking dish made the slices thinner, I think I would go with the cast iron next time:)
