Busy fall days means standing in the aisles of a grocery store, just longing for a wee bit of inspiration.
Thankfully my sweet mom often hands me copies of her latest stack of favorite recipes. I have no idea where this one came from, so if it’s yours.. thank you!
At the top of this one, she’d noted “Good” and “Hot”.
I will be adding “Fast” and “Simple”

If you still have some fresh, sweet peaches.. this would be amazing…
Just Peachy Shrimp Tacos
Ingredients
- 1 cup Medium or Hot Salsa
- 1 cup frozen, thawed, or drained canned peach slices
- 1 lb deveined, peeled, medium sized shrimp
- 1-2 tbsp fresh cilantro minced
- 1 1/2 cups napa cabbage, chopped
- 6 corn tortillas (6 inches), warmed
Instructions
- Heat salsa and peaches in a skillet over medium heat until mixture is hot. Add shrimp and cilantro and continue to cook until the shrimp is cooked (pink and no longer translucent). Place a handful of napa cabbage down the center of the tortilla, top with the shrimp and peach mixture and add additional cilantro to taste. Wrap the end and then fold over the sides of the tortilla.
Serve with a large glass of wine or a margarita and a laptop for the rest of the checklist…
Love the use of cabbage here both a a ‘filler’ and to balance the flavours! Looking at your list, and I make them all the time: sheesh If I tried to manage some four coffee breaks instead of just the morning cuppa, methinks I would need a 36 hour day and not the 30 hour one agreed on the last place visited 🙂 !
Hahaha.. I think coffee is my favorite “food group” although I realize it doesn’t really count as lunch, it usually is.. 😀

Beautiful lady: simple explanation – I am a cuckoo in the nest! Work fulltime, study ‘another’ fulltime, do voluntary work ‘another fulltime’ and have large garden etc etc et al. Typical Gemini: finger in every pie. Live rurally and perhaps at a certain time in life [not that that will ever hold me back 🙂 !] SO: no blog to call my own: boo hoo!
This is my kind of recipe Smidge. Fresh, fast and tasty! My family would love this one. I completely sympathize with you, my list is oh so similar. Finding time for my workout seems to be the most challenging. Well, that and laundry. 🙁

Love your “to do” list. The photographs are so pretty and enticing, too. The distinction of a LARGE glass of wine is helpful when putting this all together. Wouldn’t want to skimp on the ingredients of a wonderful combination.
I would never have thought to add peaches to shrimp! I see a future experiment. Now I’m wanting coffee 😉

What a beautiful recipe! I don’t cook enough with peaches, I went to my blog and noticed I have ONE recipe for a salad using peaches and that is it. Too bad, it’s such a wonderful ingredient in savory dishes, as you proved so well!

The shrimp-peach combo with some heat and then the cooling napa cabbage and cilantro…it just sounds like the perfect taco in my book! That’s a big list…I thought mine was long. I with I could have more than two cups of coffee, but it will keep me up through the night if I have any past noon! 🙂

This sounds delicious! I order shrimp tacos at one of my favorite beach restaurants, and as good as they are, I think you have them beat! The peaches are the scrumptious addition! Your list is daunting. I learned a while ago not to write it all down. I only grew discouraged! Ha! Debra

If you truly do write up a to do list like this and truly have a coffee listed as a must do, then you and i are best friends for sure!! I write in my coffee break daily!! tho for me its just espresso first thing and again at 2pm…but no less than that!! And of course, a glass of wine at 5pm to set the mood for dinner prep 🙂 How very nice to receive inspiration like this, your mom knows what will taste really good!!

OK, I know I can’t just say the same thing I always say (or always WANT to say – which is: you are just flat out adorable, Smidge!) so I won’t say THAT. I’ll say instead, I love the idea of a peachy easy (beautiful!) dinner like this during the season where madness momentarily takes hold as we try to get our new/old mojo goin’ again.
