and we’re embracing (sort of)
autumn in all his cinnamon apple glory
all blustery and sturdy baked,
like this simple
Martha Stewart’s Apple-Blackberry Cake..
a not too sweet cake
in a sugar spun-dusted springform pan
with a wee, lighthearted
whisking of butter, sugar, eggs and a bowlful of flour..
a
simple
cake batter
dolloped and spread thickly into a warm layer, perfect
for apple slices and blackest of berries
all finger-pushed snug, tucked safe in their cushy warm bed.

It was the perfect cake to end an evening with friends.
But you know me..
I began thinking it would be more fun as a Bumbleberry Cake.. filled with all sorts of berries.
I imagined all sorts of sauces..
but thankfully we left it alone and settled in with a warm slice and whipped cream because.. as always
“it’s a good thing”
..just as written.
- sugar for dusting pan
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 6 tbsp butter, unsalted and melted, plus more for the pan
- 3/4 cup dark brown sugar, packed
- 1/2 cup whole milk
- 2 large eggs
- 4 McIntosh apples, peeled, cored and sliced into 8 wedges
- 1 cup (1/2 pint) blackberries
- 2 tbsp brown sugar
- 1/4 tsp cinnamon
- 2 tbsp butter cut into pieces
- whipping cream, optional
- Preheat oven to 375F. Butter a 9" springform pan. Sprinkle, dusting with sugar and shake the pan to coat. In a large bowl, whisk together flour, baking powder and salt. In a medium sized bowl, whisk together melted butter, 3/4 cup brown sugar, milk and eggs.
- Slowly fold the butter mixture into the flour mixture, stirring until blended.
- Spoon the batter mixture into the prepared springform pan, smooth the top evenly. Arrange the apple slices and blackberries as you wish onto the cake batter. Then press each piece of fruit gently down into the batter.
- Sprinkle over with the 2 tbsp brown sugar and cinnamon. Top the brown sugar by dotting the remaining 2 tablespoons of butter over.
- Bake until top is golden and the fruit has softened, about 50-55 minutes, or until a cake tester inserted in the center comes out clean.

Lovely post as usual!! Favorite dog breed…Soft-coated Wheaten Terrier. We have two (our second and third). Smart, adorable, stubborn, smart, silly, self-confident, lovable, smart, soft. Lovely cake. I have an abundance of apples this year, so I may tweak this and give it a try with some. Yum.
Dog: I have an English Springer Spaniel, and it’s the best dog I’ve ever had (and I’ve had a few). Even tempered, never cross, always happy, easy to train, incredibly bright, needs lots of exercise, which is no bad thing as it means exercise for me, too, and a hearty appetite (meaning she’ll eat anything!). Are you thinking of getting another dog?
Oh, Misky, we are sooo missing having a little puppy to cuddle around here. I saw some Spaniels at the pet shop but have no idea what they are like as a breed. They sound lovely! Now.. I just have to convince my husband, he’s determined that there be no more dogs:P

And as for dogs, German Shepherds and miniature schnauzers are my future babies! OH and a Pomsky too 🙂

Dog: Yorkies are my favorite…..They don’t shed. They are athletic and fun loving. Yorkies tend to bond strongly with one of the owners and are loyal. They remind me of the velveteen rabbit story in that it is as if a stuffed toy became alive. The one con;they are delicate and must be protected from themselves…..they are foolish enough to jump off of high tables and can really hurt themselves.
Not shedding is a good thing around here, Ros, if I could talk Dave into another dog, not shedding is a good plan! Nice to see you here.. how was your summer??
That cake – and your words too – are lovely and so autumny! My favourite breed of dog is an Irish Wolfhound. (We’ve got one) They are very serene and radiate calm. Also very sensitive and seek closeness (but not fuss) and are playful too. Wonderful with children and any other dog. I can gaze into our wolfhound’s eyes and she will gaze back – there’s no sense of challenge there, just adoration! Would love to know why you’re asking…. 😉
Ahhh, just dreaming, Cathy, just dreaming.. I’ve not thought of an Irish Wolfhound, I will have to google that one. It’s so interesting to see what sort of dog each blogger has:D This one sounds just lovely!! xx

So my favorite breed of dog is the one I have now. ” Buddy” is so sweet and perfect for our family. He is a little Yorkie, great with kids and other dogs. He has a vibrant personality and yet also enjoys a good snuggle. He is easily portable because he only weighs about 5 pounds soak and wet. Enjoy your weekend. BAM
Beautiful Barbara – apples and blackberries are made for each other! As for dogs, ous are both rescue with a real mix of heritage (mainly goatherd dog and local lady dogs!) but they both have a lot of terrier in them. Love terriers of all sorts as they are playful, intelligent, energetic and full of life…and they travel well too 🙂 Ours have clocked up thousands of kms to and from England with us!
Growing up, we had a golden retriever, but I always imagined myself with a cocker spaniel. But I don’t think I’m partial, most dogs I meet are sweet. 🙂

I make a very similar cake with just apples and we love it. I also use pears when in season too!
Perfectly inspiring for fall, except that it’s 20C in Toronto today (Thursday) and we’re not complaining. Not at all. But you’ve inspired me to bake this at our cottage. Mmmmmm, I can hardly wait to smell those apples baking (no blueberries!)!

That’s quite a cake, Barb, and when it comes with Ms. Stewart’s seal of approval, it has to be good. Much has been written about her, and plenty of it not good, but her recipes speak for themselves. i’ve yet to try one that I didn’t thoroughly enjoy. I bet she’d be proud to see how well your was prepared. As for dogs, I’ve had pedigrees and loved them all. Max, though, is a rescue and that’s all I’ll adopt now. He’s a boxer/hound mix and only now, at 5 years, is he beginning to calm down. Not so coincidentally, he is the last puppy I’ll adopt. 🙂
