Restraint, self-control, austerity can sometime feel like
self-denial
{ or heaven forbid }
self-deprivation.
Fortunately, there exists many recipes which quench both the thirst for “healthy” and satiate the hunger for “yum”.
This Indonesian Slaw with its Spicy Peanut Dressing does it for me.
You can thank me later.. I can’t hear you over the crunch..

Indonesian Pineapple Slaw with Spicy Peanut Dressing
Indonesian Slaw with Spicy Peanut Dressing
Ingredients
- Salad
- 1/2 large cabbage, thinly shredded
- 1/2 pineapple, sliced into thin strips
- 2 carrots, peeled and shredded
- 1 red bell pepper, diced
- 3 green onions, diced
- 1 cup cilantro, chopped
- handful peanuts, roasted, salted and chopped
Dressing
- 1/3 cup all natural peanut butter, smooth
- 1/3 cup rice wine vinegar
- 2 tbsp tamari sauce (or soy sauce)
- 2 tbsp brown sugar, packed
- 1 tbsp Sriracha sauce, more or less to taste
- 1 large garlic clove, minced
Instructions
- Toss all salad ingredients from the cabbage to the cilantro into a large bowl. Cover and refrigerate if making in advance.
- To make the dressing, measure all ingredients into a magic bullet or blender and blend on high until the dressing is completely blended. Cover and refrigerate separately if making in advance. This salad is best served the same day you've made it.
- To serve, pour over the desired amount of dressing then toss and serve immediately with a handful of chopped peanuts sprinkled over.
Notes
I think there are so many other ingredients you could toss into a salad like this bean sprouts, sugar snap peas, etc.

Now this is one delicious looking slaw! That spicy dressing with 1 Tbsp. of Sriracha was quite delicious!
This is a really appealing salad, Smidge. I’ve had similar slaws, but your dressing has more to it than whatever I’ve previously used. I love the sriracha! That’s a nice surprise addition. It looks so pretty on the plate, too, with the red bell pepper! I think this would be a real crowd pleaser in my little group. 🙂

The flavour combination really hits the spot for us too, and I adore the crunchy peanut garnish. I also love the contrast of the salty, sweet and sour you’ve created in the dressing. A perfect nod to spring time, which cannot come any sooner.
It is a good one.. my family really loved the spicy kick. Not too many salads have that.
This is just what I need … a plate full of colors and taste.
