It was my turn to take Bella out to the dog run, we’d let her go on her own but she’s still small enough to squeeze through the metal fence posts and escape. As spoiled as she is at home, Bella would throw us over in a heartbeat if she caught a glimpse of a child walking by. She adores children, possibly from her early days at the Pet Store where I’m sure she was cuddled by many!
Anyway, I got a “dog’s eye view” of Bella’s run when both feet flew out from under me and I landed with an unceremonious thud on the small of my back. It was one of those “I think I’ll just lay here for a bit before I try to move” moments. Bella was delighted that I’d decided to lay down to play with her and was happily snuffling my face. I thought about how ridiculous I must look, laying there in my housecoat and slippers and hoped that nothing was broken so I that I wouldn’t be seen like that. I was hoping Bella would miraculously turn into some sort of rescue dog, running and barking for help.. But all I got was a wet nose in my face.
Today my back’s still a bit tender, it’s been x-rayed and who knows when I’ll hear back on that. It’s not like they can put a cast on your spine. So I’m wallowing in a bit of self-pity, laying on the couch, reading blogs, watching Master Chef and home renovations, planning recipes and crafts.. and looking into cheap flights to Mexico.

I endeavor to treat myself when I’m wallowing. Gone are the days of “big batch” chocolate chip cookies because both kids are on a self-imposed health kick before summer swimsuit season arrives. This little recipe is one of our favorites and Blueberry White Chia Puddings are so simple, you could make them laying down. Even my son could make these, which says a lot. He’s the one who brought home a box of Hamburger Helper and didn’t realize the hamburger wasn’t actually already in the box.. but I digress.
Blueberries are my magical Superfood! I add a handful pretty much every single day to my protein shakes, I love them sprinkled on homemade granola and yogurt and now I can have them in my vegan and raw chia pudding and eat it too;) I swear blueberries are the reason why I didn’t get the cold everyone else did this winter. And now research shows that blueberries might even improve my memory.. I wonder if they work on backs?
- 1/2 cup almond milk
- 2 tbsp white chia seeds
- sprinkle with blueberries
- 1 tbsp agave syrup
- In a small cup, pour in 1/2 cup almond milk. Stir in the remaining ingredients. Screw the lid on and shake vigorously.
- Refrigerate, shaking or stirring every now and then. Top with more blueberries to serve.
- The pudding could be set within three hours or so, but we left ours in the fridge overnight to set.
Dearest Smidge, I hope all you have bruised pride and no broken bones. Poor thing, and you would think Bella would immediately take the harness as therapy doggie, but I guess not. Your blueberry and white chia seed pudding sounds very interesting and very healthy.
I know, eh? I was sure she’d be a rescue dog. But I guess she’s a bit small for that:)
I could just see it, laying there in your housecoat and slippers as nonchalant as possible ~ it’s always funny later, a good story, but it sure is painful! Sorry to hear you took a spill and hope there is nothing serious to mend. Your chia pudding sounds delightful and sooooo simple, gotta write that down for an easy post-surgery treat, part of my don’t over do it plan. 🙂

I hope you heal quickly Smidge! The lower back is such a painful place for an injury. I think you certainly deserve a bit of wallowing and comfort food. This dish looks delicious. I’ll have to try it out and see if the kids like it too. 🙂 Feel better!

I think any liquid works, if you do get the chance to try, just let me know? The kids seem to like the taste of almond milk better. I quite like both, so I think a soy pudding would be yummy too!

Oh Barb! I am soooooo sorry about your back! How miserable. I remember being pulled down by my then seven-year-old daughter while ice skating and falling smack on my tailbone. Not fun. Take it easy.
These little puddings look perfect for my health kick as well! No bikinis for this 43-year-old mom but just looking good in jeans is enough for me. 🙂 I wish I could drop in and bring you some soup.

Oh no, you fell! I do hope your back will be alright. The last time I fell I ended up in Emerg with a broken wrist. I’m sure that some of that beautiful pudding would have made me feel better in no time flat! (Oh, that word reminds me of when I was flat on my back on the sidewalk, waiting for someone to rescue me — ouch!)
I remember that, Mar! That was an awful time for you! Fortunately (or not?) I didn’t put my arms out behind me, so they’re fine. Unfortunately, I fractured a small bone in my lower back. No brace required, just no exercise and rest.. which I can’t stand because I love going to spin class!! Oh, well.. lots of time for blogging:)

Barbara, sorry to read about your back problems …. constant pain is a living hell. I hope of all my heart that they will find out what is wrong and that you will get support and help. But I quite like your way of spending the days …. *smile

And how is your back now? I did a number on mine in January and I was happy that after not being able to walk for a day, it healed within 2 weeks. It’s a time for reflecting and appreciating.
I’m not familiar with the white chia seeds. But we’ve been eating a lot of black. I like these little packages of goodness. I’ve got to try some pudding.
I think two to three weeks was about the time it took for my back. I say think, because I’m finding it painful to go back to doing sit ups at the gym. I didn’t take enough time to sit and rest, I should have, but life is so crazy, isn’t it?! I must look for black chia seeds now:D
Guess what I had for breakfast this morning? Yep. I made your vegan chia pudding, even included the blueberries. I like it a lot, despite not being able to find white chia seeds. Black seeds did just fine. So, thanks, Barb. You may make a breakfast person out of me yet. 🙂
