I felt it Sunday morning, when the clock ticked far past my usual wake up time. Rolling over I could spy the sun peering through the curtains. Opening the door for Bella, I felt a rush of warm and I could hear the celebratory song of little prairie house sparrows, black-capped and boreal chicadees and the trickle of melting snow. Bella could feel it too, she ran away from her dog run and straight to her gate, eager to go for an early morning walk. This is her First Spring, so the strangeness of grass, heat and rain will all be new.. and that makes it new all over again for us!
A quiet lunch with Dave and my mother-in-law, Jane was just so lovely with laughter, BLT’s and hot sweet tea with milk. We walked our dogs at the Bowmont Park off-leash area and had to dodge the deep pools of water and slick ice. Both pups had soaked undercarriages, but it was worth every second. We walked high on the bluffs of the Silver Springs escarpment above the Bow River that had been so menacing last spring. The two ponds that were to capture sediment were overwhelmed. Houses were flooded for days, water reaching to the midway point on the main levels, basements completely engulfed. Today it was an innocuous, icy turquoise, rambling unpretentiously around the curve of those same park-like yards and homes.
The breeze teased with the promise of spring, of pungent new grass and crocus heads nodding under the sun. The lower paths were closed while the city makes repairs and changes. I look forward to returning to photograph the natural waterfalls tumbling over a six meter wall of sandstone left behind by glaciers. The bedrock you’ll see is the 65 million year old Porcupine Hills Formation that contains calcium carbonate. The calcium carbonate is gathered by water flowing over it, is then deposited on the algae covered cliffs of Waterfall Valley which forms spongy Tufa. I’ll capture photos of it for you this summer when the paths are reopened.
I took photographs yesterday when we went back for a second walk but I managed to delete them all from my camera. If I can get there again today (it’s such a lovely walk) I’ll come back and add those photos here.

Arriving back home, I was seized with an urge to spring clean. Arms wide on hips, I appraised the disaster our pantry had become. Opened, half-empty cello packages were wedged in between the containers I’d so carefully labeled a year ago. Despite the disaster, it didn’t take long to reorganize. That’s the advantage of starting out with an organized pantry.. and spice rack.
I’m already sounding embarrassingly OCD, but I will admit to having spices in my spice drawer organized alphabetically. I couldn’t stand it any other way.
My kitchen’s disgrace wasn’t entirely my fault. We had to bring home duplicates of almost everything from the lake last summer. We are almost through that second set of cleaning products, but the spices were another issue altogether. The small shelves above our stove are so high, it’s difficult for a short smidgen of a person to see what’s lurking at the back. I decided my spices needed organizing “Once and For All” so off to my favorite organization store I went: IKEA!
Ikea has these perfectly sized little jars with lids. All I needed was a place to put them and I fell in love with this little turquoise unit. Spices in my drawer next to the stove were topped up and all the extra packages filled the jars.. all alphabetically, of course;) I know spices have a shelf life, but I couldn’t bear discarding them. “Waste not, want not.” my mother’s words always ring in my ears. I believe spices just lose their pungency, so that may mean adding more to a recipe than would normally be called for. If you know more about this, I’d love to hear!
I made one other organizational change in my pantry because it was jammed with cans and jars that were difficult to see behind. I reorganized and put similar tins together (soup, tuna, etc) and typed a list of each item and how many we have. I’ve printed it and stuck it to the cork board in our pantry.
Now when I plan a recipe, I can see at a glance what we have, and cross it off as we use it. I cut and paste the list into my Notes on my phone and now when I shop, I can check to see what we have. Keeping a digital format on my computer is best, but with others using the pantry, just scrawling on this sheet works. So often I duplicate ingredients because I’m running into the grocery store before I can stop at home to see what we have stocked already. The added benefit for me is that I can now plan recipes that use up some of the excess stock or bundle some of it up and take to the food bank.

I found 4 extra ripe avocados and was excited to try this recipe that I’ve seen on NancyCreative’s blog { Please drop by her blog, it’s beautiful! } and Pinterest for some time. Eva at Kitchen Inspirations made a yummy chocolate avocado ice cream pudding by adding a frozen banana, brilliant! I had to change it up, Nancy made a beautiful mousse and I decided to go for a pudding texture and to change up the flavors. You start with avocados and cocoa powder and from there anything goes. I love ordering Dirty Chai at the coffee shop, so this pudding is a Dirty Chai { with espresso } flavor.
- 4 large avocados, ripe
- 1/2 cup agave nectar*
- 2/3 cup unsweetened cocoa powder
- 6 tbsp chocolate almond milk
- 2 tsp vanilla
- 2 pinches sea salt
- 1 tsp fine espresso grounds
- 1 tsp Chai Spice Blend { below }
- Toppings
- cacao nibs
- raspberries
- banana slices
- blueberries
- strawberries
- 2 tsp cinnamon
- 2 tsp cardamom
- 1 tsp ginger
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- Scoop the avocado into a food processor or blender. Measure in the agave nectar, cocoa powder, almond milk, vanilla and sea salt. Pulse and blend until silky smooth, scraping down sides as needed. Scrape into a large bowl and stir in the espresso grounds and chai spice mix. Taste and adjust espresso and chai flavoring as desired.
- Scoop into smaller ramekins, cover with plastic wrap and refrigerate for 30 minutes or overnight to set.
I’m impressed and it’s so good to see a pudding without sugar 🙂
We’ve cut back on a lot of refined sugar here, every little bit helps I think.
Your pudding looks wonderful–what a great idea to add chai and espresso! I love your Ikea spice jars, too, and I admired that little cart the last time I was in the store! Thanks so mcuh for linking back and mentioning my site! 🙂
You’re welcome:)
Beautiful post, Smidge! I’d love to see photos from the park – and of the waterfall if you ever get to take one. Sounds like a happy, productive time at your place! xx
It’s so frustrating losing digital photos, although it’s not as pretty around here right now with all the melting snow and brown grass, it might be a good thing;)
What a delicious looking pudding my friend, your photos are fantastic! And love the wonderful chai blend addition!
Cheers
Choc Chip Uru
It was delicious, every last spoonful (I should know;)xx
Your pudding looks so thick and decadent, Barb.I bet it’s a bit of a surprise for some to learn that it’s vegan. I know I’d be. Incredible how quickly a sense of normalcy will return to a landscape that only months before was ravaged. I sincerely hope that kind of flooding is never seen again. I know that OCD can be a real problem. If you like, I’ll turn your loose in my kitchen. Look at it this way. It will either cure you or I’ll end up with the organized kitchen of my dreams. Do you feel lucky? 🙂
You have a deal! I’m feelin’ very lucky! I might have to buy a lottery ticket while I’m at it, right? I’d love a challenge like that! I should become an organizer.. but you’d be my first customer so it’s free:D
You dirty chai lovers are rare at my place of work! I do find them to be fun beverages though! This pudding sounds wonderful, just the perfect amount of chocolate/spice/ and of course..COFFEE! Also, I do hope you get some photos from your walk, it sounds lovely!
Haha, I feel like I need to go wash up, loving those “dirty” chai’s;) You must make the most amazing coffees.. you’ll be a pro by now!! I wish I could pop into your shop!xx
I love your organization… you apply to your blog site the same as you do in your kitchen pantry…. Diane
I hadn’t thought of that, Diane, I feel better when everything’s organized.. even my blog:)
Now when you say you opened the door and you felt it was warm, how warm are we talking? I’m very pleased to hear you’re seasons are turning around for you. I love your little jars and I really would like to buy the same ones for my spices. Mine are all over the place and they aren’t alphabetical but I would love them to be. I have a bad habit of not wanting to search for a particular spice and just going to the shops and buying another one because it seems easier xx
Oh, dear.. in the morning, maybe plus 5. Seeing that in writing now, I realize it sounds crazy cold. But for us, it’s been so cold you can feel the warmth in it. It got up to 11 the other day and it was perfectly balmy to us prairie gals;)
Woohoo, another way I can use up my avocados. They always seem to go bad on me overnight, grrr. The chai spices sound so warm and inviting, a perfect match for chocolate.
Hope you are able to recover the pictures from your walk with the pups!
Haha.. and not in a salad;) They do go bad.. or when I need a ripe one the store’s only got little hard rocks, grrr!
I love your title turquoise container for your spices. Something that pretty would be a great help to me, too! I have a recipe very similar to your chocolate pudding. My closest friend is a very creative vegan cook, and the first time she served it to me she encouraged me to guess the ingredients. I’d never have come up with avocados as the base. She used dates in place of the agave. I think the end result is probably very similar. It truly is delicious. And such a healthy surprise!
Now dates would be just lovely, I’ll try those next time. We use them in our shakes now and then as well:)
Hello fellow OCD friend. Hee hee.
I love what you have done with your spices. Mine all stand in a cupboard next to the stove. Not idea, but better than all over the show I guess.
Have a super day Smidge.
🙂 Mandy xo
Yay!! I love finding other OCD people:) I say I’m OCD.. long to be perfectly organized but I just can’t seem to keep it all together. Within days I’ve got paper strewn everywhere and my pantry is a mess. It’s hard to keep up, I think it’s a full time job. I’m sure that’s why they had all that help on Downton Abbey;)
A little neurotic cleaning is good for the soul, don’t you think? I am glad you were cleaning out that spice drawer as I love this pudding. I have had an advocado based pudding at a raw vegan party once but it was certainly not as rich and delicious as yours. Hey how is your back front he fall the other day? Be careful as puppys love to pull on you and get underfoot whilst walking. We have a dog park by us too but there are way too many dogs and some not too friendly so don’t feel comfortable taking my little Buddy off of his leash. When he has his leash on I can do a quick grab and go if a big unfriendly dog heads our way. Take Care, BAM
I think it’s good for the procrastinator in me, I find I’m the most amazing at cleaning when I’m avoiding something else, lol! My back, it’s crazy.. I can walk straight, walk downstairs but I can hardly make it up the stairs. Must be the angle and stress on the lower back. I went to the hockey game last night and could hardly make it back up the stairs to the concession area. I have to really watch my dog, she does pull on the leash because she’s a puppy. I’m not big on offleash, she’s been bashed twice by big bully dogs, poor thing. She’s afraid of big dogs now if they are too rambunctious! So you leave Buddy’s leash on.. and then let him run around? That’s a great idea! At this stage, she just takes off on me.. but some day I hope we can do that.xx
You are so well organized!
The raw spiced pudding looks super!
It was (past tense;) so yummy!xx
I sometimes get that urge to do spring cleaning, but I try to fight it. 😉 Actually it’s always a satisfying thing to do. Great pudding — it looks wonderful, and I’ll bet the flavor is great. Thanks.
Fight away, it’s a bit overrated sometimes:D But cooking and baking.. never give that urge up! We’d miss you terribly!
Hey Barbara. Thanks for the comment you left on my blog – was it yesterday? Sorry I’ve not commented here for a while. Seems like you’re going strong! This recipe sounds delicious and I really have been craving chocolate all day…
You’re so welcome and no worries at all, it’s a busy time working and blogging at the same time. It’s been way too long since I’ve stopped by your blog too. I’m hoping to set a little more dedicated time aside for it.. so far it’s been working:D
Your spring organization looks wonderful Barbara, I adore that turquoise caddy, I just need a spot for it…perhaps the cottage! The pudding looks great too, I made an avocado chocolate pudding a few years ago and was quite surprised at how delightful and creamy it was, who knew!
BTW, I thought I had already put a comment on this post…probably went awol!
Oh, it would be perfect at the cottage! I wish I still had a cottage to decorate. There’s nothing prettier, I think! I’ve located your recipe, I love that you added frozen banana. I’m going to add a link to my post:)xx
I smiled the instant I saw your spice jars. I too have oodles of them! Or, hang on a sec … I must have fewer than you … mine still fit in a drawer. Ha! I haven’t written on the lids, although I think it’s a great idea. Do you use the erasable “chalkboard” markers? (or perhaps they have another name). I’ve noticed choco-avo pudding is making the blog rounds, but I like your addition of espresso and chai spices, which makes it that much more unique. A friend made this pudding for me last year and I was pleasantly surprised by the “secret” ingredient!
Of course you have the same jars.. we’re a lot alike:) I didn’t use erasable chalkboard markers, I used Expo Bright Sticks Wet Eraser (right near the Dry Erase markers). I’m having trouble with my wet erase Chalkboard marker, it’s leaving marks on my outdoor chalkboard sign:(
I, too, should organise my spice rack.. I have some of these IKEA jars but have not bought enough for all my spices..
Ooh the texture of the chocolate mousse does look really good. Who would have thought – Avocados! Am sure it would taste excellent as well. Great addition of the cacao nibs. I love them for their intense flavour.
It seemed like a lot of jars at the time. I was looking everywhere for an over the door hanging rack to put them in but had no luck. I think that would have been even better!
Woah from the photo I thought this was going to be a rich and decadent chocolate cup (I don’t have OCD but ADD and couldn’t even connect the title to the pic haha) but how great is that recipe ??
And spice racks i think are the mess and worry of every kitchen – you always have so many of them and never need more than a tsp or more of each and they just take up so much space ! My brother-in-law has something also from Ikea I think that’s just one giant slab of magnetised board and the spice containers just stick to it on the wall next to the stovetop. I can’t tell you how ingenious I thought (and still think !) that was 🙂
I was looking for that magnetized board. I had a tiny one at the lake but had so many little packets when we brought everything home! I’d love to have done something like he did! xx
