I was experimenting with healthy chocolate chip cookie recipes this past week and quite liked these. They are a soft, melty cookie, but be warned, there’s just not that pleasing crunch that you’d have in a regular chocolate chip cookie.
But lovely just the same.
These are a healthy diversion because they are made without flour, sugar or eggs.
These are awesome for those craving something sweet
but trying to eat healthier.

Or people who have had a few too many glasses of wine or Moscow Mules..
or people who have gone out for lunch with their son and daughter a few too many times..
Or people who love going out for dinner with their girlfriends a little too often.. wait, there’s no such thing as “too often” where my kids and my girlfriends are concerned!
Then there’s those people who love to snack on Hallowe’en candy.
On that note:
Who ARE those evil people who decided that the wee packages of chocolate were the perfect “guilt-free” size for snacking?
How did they know we would say to ourselves EVERY TIME, “just how many calories could be in such a tiny little treat anyway” .
Do they know some of us are somewhat numerically challenged enough not to add up the calories in a handful of those little packages?
Sigh…
Back to our Quick ‘n Healthy Vegan Chocolate Chip Cookies .. if you chopped up dark chocolate in these, I think they could pass as a breakfast cookie! I also think they’d be yummy if you stirred in all sorts of other healthy nuts and seeds, like pumpkin or sunflower seeds.
- 1 cup mashed banana (3 small)
- 1 1/4 cup oats, gluten-free if desired
- 1/4 cup almond butter
- 1/2 cup vegan chocolate chips, chocolate chips or dark chocolate cut into chunks
- 1 tsp vanilla extract
- 1 tsp salt
- walnut halves
- Preheat oven to 375F.
- Mix together all ingredients, stirring until well blended and the batter comes together well.
- Drop on parchment lined paper, press gently down and put one whole walnut half in the center.
- Bake for about 10-15 minutes or until lightly browned.
- Remove to a cookie sheet to cool.
These look so lovely! I bet I would not mind the lack of crunch, as I prefer a soft texture in any cookie

Oh my goodness, Barb, these look so delicious. I want them now. 🙂 I think they would fall into the same category as what you mentioned about small bites of Halloween candy! You can’t stop at one! I’d be in the same trouble with these cookies, I’m sure, but I think I’ll still have to indulge! Yum!
