Cranberry Pistachio Goat Cheese Appetizer

Song for Autumn

Don’t you imagine the leaves dream now
how comfortable it will be to touch
the earth instead of the
nothingness of the air and the endless
freshets of wind? And don’t you think
the trees, especially those with
mossy hollows, are beginning to look for

the birds that will come – six, a dozen – to sleep
inside their bodies? And don’t you hear
the goldenrod whispering goodbye,

the everlasting being crowned with the first
tuffets of snow? The pond
stiffens and the white field over which
the fox runs so quickly brings out
its long blue shadows. The wind wags
its many tails. And in the evening
the piled firewood shifts a little,
longing to be on its way.

What a lovely reminder that I need to pick up my canvas and continue painting this little one..

Thanksgiving was chaos as usual.. but this simple appetizer couldn’t be quicker.

♥

A 10 ounce Goat Cheese log rolled into chopped pistachoes and dried cranberries is as pretty for Thanksgiving as it would be for Christmas. There are many variations online for this appetizer but I love anything spicy.. and the Homemade Food Junkie had the prettiest display with rosemary and crackers and so I must credit her for inspiring me to make her version. Check out her instagram account for so many other delicious recipes!

You’ll need only a few ingredients.. including these beauties

(why do I love the visual look of jelly in jars so much?!!)

If you don’t like spicy there are any number of savoury jellies to be found, plus the sweetest honey selection everywhere that you could substitute.  I personally love Peace River Hot Honey and Wildly Delicious Red Pepper Jelly, both found at my local grocer (Coop). Now I’m thinking up ways to use these condiments in other dishes..

Bon Appétit I’m off to paint a fox..   xxx
