Whenever I drop by for a visit, this little one always asks

then she says, “I like energy balls, would you like one Nana?”
All in order to secure one for herself, of course, because she loves them!

These are quick to make with minimal ingredients you likely have around your kitchen.

Chia seeds are nutrient dense, high in fiber, protein and Omega 3 fats. Flax seeds give us fatty acids, fiber and lignans. Flax should be ground so I’ll make sure to buy that the next time.

- 1 cup large flake oats
- 1/2 cup peanut butter
- 1/3 cup honey
- 2/3 cup shredded, unsweetened coconut
- 1/2 cup chia and flaxseed blend (often in the health food section)
- 1 tsp vanilla extract
- Mix all ingredients together in a bowl and stir until all ingredients are blended well and mixture pulls away from the sides of the bowl.
- Scoop out and roll into balls, about 1" diameter.
- Refrigerate or freeze.
